Dinuguan (Blood Stew)


Dinuguan…………A very common dish in the Philippines, might sound exotic to some foreigner because of its ingredients such as pig’s internal organs particularly the liver, kidneys, hearts, ears and pig’s blood as the soup. Dinuguan comes from the word “dugo” means blood.  There are two versions of dinuguan, one is using “pork” internal organs and the other one is “chicken”. same thing using chicken’s hearts, liver, intestines, kidneys and chicken blood as well. This dish might sound very alarming to others but I think it is the same concept for Europeans “blood sausage”…………………I am not sure of if pig’s blood have health features, so might leave it as a question. Do pig blood have health benefits?

Ingredients: good for 6-8 persons

  • 2 tbsp oil
  • 4 cloves garlic chopped
  • 1 large onions sliced
  • 250 gms pork kidneys
  • 250 gms pork liver
  • 250 gms pork hearts
  • 250 gms pork ears
  • 2 cups water
  • 2 pc red or green chillies
  • 1 cup pig’s blood (frozen)
  • 1/4 cup vinegar
  • 1 tbsp white sugar
  • salt and pepper to taste
  • 1 tbs fish sauce

Procedures:

  • In a large sauce pan, boil 2 cups water and pork kidneys, liver, hearts and pork ears in 5 minutes. drain and cut into desired size (small cubes)
  • In a big pan, heat oil and saute garlic and onions then add in pork liver, hearts, kidneys and ears and seasoned with salt and pepper. saute until brown then add pig blood, vinegar and sugar. adjust taste by adding fish sauce
  • Add jalapeno pepper before serving. Serve hot
