Bicol Express


It’s a pork dish perfectly cooked with coconut cream and shrimp paste. I remember yoyong – one of our cook in our small cafeteria (family business)..This is his best recipe since he is from the bicol region, His one is really super spicy. He chopped the chillies as little as he can that you couldn’t see. I notice that whenever he eats his meal, it is always accompanied by fresh chillies and a fish sauce with calamansi or lemon. Whew!!! really hot & spicy!! Well, I like it too… Did you know that coconut cream saturated fat is actually healthy good fat that your body can easily metabolize and turn into energy fast, without raising your blood cholesterol level and adding pounds to your weight. . . In other words, it doesn’t transform into bad cholesterol that may clog up your arteries. So don’t worry.

Ingredients: Good for 4-6 persons

  • 1 tbsp oil
  • 3 tbsp chopped garlic
  • 1 medium chopped onions
  • 750 grams pork meat (belly) small dice
  • 1/2 cup shrimp paste
  • 1/2 cup coconut cream
  • 1/2 cup water
  • 3-4 pcs siling sigang (green chillies)
  • 4-6 pcs chopped small red chillies
  • 1 tsp of pepper

Procedures:

  • In a wok, heat oil and saute pork meat until brown and tender, saute well
  • add in garlic and onions, shrimp paste.simmer for 2-3 minutes. ad in coconut cream and water. cooked for 5 minutes
  • add in chillies..seasoned with pepper
  • serve hot
  • warning: this is really spicy!!!!!!!!! prepare your cold water
