Fancy Ceazar’s Salad


Fancy Ceazars’ Salad………….Again, If you are still with me, this dish is part of our 7 course meal with my friend. This will be our salad for the dinner course.  For those who just tuned in, I already posted canape of melba toast last monday, baked mussels with triple cheese on tuesday and sopa de marina with eggs and nest yesterday as our soup. Today, My version of Ceasar Salad. You might be asking me why the name is “fancy”, I used fancy lettuce instead of using the COS lettuce, because this lettuce s easy to present and more crispy and tastier than any other lettuce you may liked. This not much different from the traditional ceasar salad as it has bacon bits, parmesan cheese and a special ceasars dressing with anchovies. This is the 4th course, wow we all have a big appetite. Stay tune, because tomorrow it will be the main dish………………………………Did you know that salad greens such as lettuce is a rich source of vitamin K, Vitamin K has potential role in the increase of bone mass by promoting osteotrophic activity in the bone. It also has established role in Alzheimer’s disease patients by limiting neuronal damage in the brain. Fresh leaves contain good amounts folates and vitamin C.  Folates require for DNA synthesis and therefore, vital in prevention of neural tube defects in-utero  fetus during pregnancy. Vitamin C is a powerful natural antioxidant; regular consumption of foods rich in vitamin C helps body develop resistance against infectious agents and scavenge harmful, pro-inflammatory free radicals.

Ingredients: serves 7 persons

  • 1 bunch of fancy lettuce approx 300 grams (washed and chilled)
  • 3 toasted whole meal bread- buttered and mixed with herbs as our croutons (cut in cubes)
  • 10 pcs crispy bacon(in bits)
  • 1/4 cup parmesan cheese
  • Ceasars dressings
Again, Using your imagination, plate all ingredients to your guest.

Ceasar dressings:

  • 2 cups mayonnaise
  • salt and pepper
  • 1 tbsp anchovies
  • 2 pcs egg yolk
  • 1 tbsp mustard
  • 1/2 cup water
  • 1/2 cup parmesan cheese

* in a food processor, mix all ingredients and transfer into a clean jag or a ketsup dispenser. Use for salad dressings
