Kinamatisang Isda(Salmon fins in tomatoes and onions)
Kinamatisan……….When it comes to fish, this recipe is one of my wife’s favourite simple dish. The ingredients are so simple that you can see on my background, Yes, it is only made with fresh tomatoes, onions, salt and pepper with a dipping sauce of fish sauce and chillies. And the good thing, you can cooked this in less than five minutes. Just place everything inside a pot and let it boil for 2-3 minutes. You might notice, salmon is a big fish, so why did I used the “fins part”? the reason why? If I used salmon belly, or salmon steak cut for this dish, it might too expensive for us (hahahahahah LOL). Ok the reason why is, I want to show you that some parts of the fish like fins and tails or even salmon heads can be cooked as tasty as this one. must try!!!!……………………..Did you know that salmon is a highly nutritious food. Of course, it is high in protein, and the “good fats.” But did you know that a serving of salmon such as this dish provides a full day’s requirement of vitamin D? and did you know that even canned salmon also contains large amounts of calcium…….
Ingredients: serves 2-3 persons
- 500 grams salmon fins
- 2 medium size tomatoes quartered
- 1 medium size onions sliced
- 1/2 tsp ground pepper
- pinch of salt
- 1/4 cup water
Procedures.
- In a medium wide saucepan, place and arrange everything and bring to boil for 2-3 minutes.
- Serve hot with steamed rice and a dipping sauce made of fish sauce and chillies

Very practical to use all parts of the fish–my grandpa was a fisherman when I was small, and we didn’t have a lot of money, so fish (especially salmon) was a special treat for us, and you can imagine that my mama and grandma made sure the fish was used as thoroughly as it could be. Grilled or roasted salmon, yes, but also salmon loaf (like meatloaf), fish soup, fish head soup . . . and all still good foods now when we can afford something a little more and *salmon* is more expensive than chicken! Who knew, back then?? 🙂
Same with us back home, every part of the chicken are being used to…. And this might be something new, when we had a party with my chinese friends, they fried the salmon fish bones and skins into very crispy that you can eat it. They toss with an oyster sauce… Yummmm
