GP chicken bbq / Inasal


Hello there…. lately my wife is craving for bbq and we are in the process of having a trial of bbq sauce, bbq marinade until we decided to use our own brand GP Garlic Vinegar Dip and Marinade… you can pls order here.. https://gpkitchen.co.nz/product/garlic-chili-vineger-dip-marinade/ it turns out so good and delicious. And most of all easy to prepare and execute. Im very happy to share you our homemade chicken bbq recipe

Ingredients
4 chicken drumstick
4 chicken wings
Salt and pepper to taste
1 tbsp achuette powder
4 tbsp GP garlic vinegar marinade dip
2 tbsp brown sugar
2 tbsp olive oil
2 tbsp lemon juice
1 tbsp soy sauce

Procedures:
In a bowl, mix all ingredients and marinate chicken 12 hours or over night.
Grill in charcoal or pan grilled.
Serve hot with a GP marinade and dip sauce on the side.

Pork Skinless Longganisa 



This is my version of pork longganisa….. Every single longganisa has its own identity and version. As i follow my own cooking rules, i always make sure that every recipe i create is compose of my 4s secret taste buds… 4s is = balance of sweet, salty, sour and spicy. So its no longer a secret as i revealed it already…. Oooops, i forget the main secret, do it with love. This is my wife and daughter breakfast for almost every single week….Now back to longganisa, its a simple minced pork with my 4s ingredients. Are you ready???? Here we go….

Recipe????

500 gms mince lean pork plus 100 gms mince pork with fat. 1 pc egg, salt pepper to taste, 50 gms crushed pineapples, 100 gms brown sugar, chili flakes to spice up, 1/2 cup banana ketsup. 2 tbs honey, 1/2 cup corn flour, 1 cup minced garlic…

 Yes a lot of garlic.. combine all ingredient together and place in a cling film like a sausage style. Depending on the size you wanted. You can do thick or thin sausages… Freeze overnight…Cooking?? take out sausage in cling film and place little oil in a teflon pan, seared all sides then add in 1 cup of water and simmer for 20 mins until it is thickened. Fry until sticky and sausages are starting to caramelized…then fonish with little soy sauce around 1 tbsp….. Serve hot with rice!!!! Yuiummmyyy

Hungry for breakfast?……Try an omelette. Its a quick and easy breakfast as you can add anything you want. My one is chorizo sausages, onions, capsicum herbs and spices plus my favourite garlic bread matched with a cup of coffee. This is a perfect breakfast for me…Yummm:……………Did you know that eggs are a very good source of inexpensive, high quality protein. More than half the protein of an egg is found in the egg white along with vitamin B2 and lower amounts of fat and cholesterol than the yolk. The whites are rich sources of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper. Egg yolks contain more calories and fat.

Ingredients:

3 eggs with 1/4 cup of cream, slices of sausages, onions, capsicum, salt and pepper, chopped parsley and chili flakes. must try…………

Warm Seafood Salad…………..It is a combination of fresh grilled seafood of your choice served in a cold garden salad topped with poached egg accompanied by croutons and dressed with sweet chili sauce……Need some quick and easy healthy recipe? starters? salads?.. Well, here we go, I am sharing you one of the most popular dish that runs on summer to fall chef’s specials in our cafe. …….Did you know that seafoods is an excellent source of many important minerals, including iodine, zinc, potassium and phosphorus. It is also rich in many vitamins, especially the B group. Seafood is also good source of flourine, which in addition, well known role in keeping teeth healthy and help calcium loss from our bones.

 

Ingredients:

120 gms of marinara mix

20 ml sweet chili sauce

salt and pepper, thyme and marjoram

garlic croutons (french bread with herbed butter with crushed garlic)

Salad Greens (any greens of your choice)

1 poached egg

 

Preparations:

assemble salad in a plate, toast croutons and place on the plate together.

On a very hot teflon pan with olive oil, place in marinara mix, s/p, herbs and when its 100 % cooked throw in sweet chili sauce. and serve on your salad topped with poached egg

Chicken Fried Rice


Chicken fried rice……………Just want to share you one of my fried rice collection. Everytime I make a fried rice, I always re-use any leftover food. Well, instead of re-heating them as is, why not create a recipe out of it. This simple fried rice is more exciting to eat than a microwaved leftover rice. What do you think? Make sense?…………..

Ingredients:

  • Leftover rice
  • 3 cloves chopped garlic
  • 2 tbsp olive oil
  • salt
  • left over fried chicken – cut
  • some onion leeks
  • 3 pcs beaten eggs

Procedures:

  • In a non-stcik pan, scramble egg in little olive oil set aside. should be runny.
  • In the same pan, saute galic in little olive oil, add in rice and leftover chicken and scramble egg
  • seasoned with salt and add in onion leeks.
  • Serve hot

Spicy Pepsi Chicken

Since I posted Coca-cola chicken maybe 2 years ago which turns out to be one of my popular post during that year. It came to my mind that i want to try it again. Because when you do food blogging at home, everyday is a different meal for us as I post every single recipe I cook at home. So back to the coca cola chicken, I was in the middle of cooking where everything is ready; I saute the onions, garlic ginger chicken, I add the condiments and last would be the coke as my substitute for water. When I opened my cup board. I saw ….. Yes I saw a PEPSI!!! and Its PEPSI MAX, no sugar! Wow, I said OMG! Since I think it is a soda as well minus sugar. I give it a try! Sorry Coca cola, you didn’t give me an advertisement for my post! and it taste good, maybe even better! (hahahaha coke) well, I like both Pepsi and Coke!…….Must try!

Ingredients:

  • 3 cloves garlic
  • 50 gm of thinly sliced ginger
  • 1 kg chicken thigh and legs
  • 1/2 cup soy sauce
  • 1/4 vinegar
  • 3 pcs bay leaves
  • pepper corn and salt
  • 1 tsp sesame oil
  • 1 cup pepsi(softdrinks)
  • 1 tbsp dried chillies(optional)
  • 1 tbsp sugar
  • dried chillies

Procedures:

  • Saute and brown chicken in a heavy skilletby adding a little oil
  • Add vinegar, soy sauce, garlic, ginger, bay leaves, sugar, salt, peppercorn, dried chillies and pepsi.
  • Bring to a boil, simmer for 20 mins
  • Cover and let simmer until it becomes tender. and all the juice is absorbed. add sesame oil before serving
  • Enjoy!!!!!!!!!

Tahong Guisado (NZ mussels)


Tahong Guisado (1024x683)Tahong(mussels)……..Just lately, I was really craving for mussels that I almost have this for our dinner every other day. so meaning 4 times a week. We had, mussels stew, stir-fry, grilled mussels and steamed mussels. Yes, that’s a lot of mussels. Well New Zealand mussels is quite famous all over the world. I think this will be the second time I will be posting this recipe.hYUMM!!!!!! Another 5 dollar meal challenge recipe. Quite cheap!…………………………….. Did you know that mussels are high in protein and heart-healthy omega-3 fatty acids, selenium and iodine. They are relatively low in calories and fat and have exceptional nutritional value. Omega-3 are the ‘good oils’ that are beneficial for the heart by helping lower cholesterol. Omega-3 also has anti-inflammatory properties. Selenium is an anti-oxidant compound that fights free radicals in the blood stream. Iodine is essential for natural production of thyroid hormones that contribute to basic metabolism as well as helping your body to efficiently burn calories……

Ingredients:

  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1 small red onions
  • 1 thumb size ginger crushed and sliced
  • 2 pc tomatoes (diced)
  • 1 cup water
  • 1 kg mussels(cleaned & rubbed)
  • pepper to taste
  • 1 tbsp fish sauce
  • 3 green chillies
  • some greens such as kangkong or chillies leaves

Procedures:

  • heat sauce pan with olive oil, saute garlic, onion, ginger & tomatoes for 2-3 mins.
  • Add mussels and cover with a lid and simmer for 3-5 mins or until they are opened.
  • add water, seasoned with salt & pepper, chillies and some greens.
  • Serve hot!!!

Pork and River Spinach (kangkong)


Pork and river Spinach (1024x683)Kangkong………….River spinach, one of my favorite green leafy vegetables. It might be quite boring if we eat this by its own, so i decided to cook it the adobo way. As I find lots of unwanted pork cutlets in my fridge, stir-frying pork and this river spinach might be a good dinner for us. Well, since we have lots of expenses these days. I decided to create a 5 dollar meal challenge for my wife and my daughter. …………Did you know that kangkong or river spinach is rich in iron, calcium, phosphorus, carotene, sitosterol, protein, vitamins A, B1 and C and has a lot of health beneficial amino acids. Other pharmacological effects includes antitoxin, laxative, anti-inflammatory, diuretic, homeostatic and sedatives (sleeping effects). Water or river spinach has a good effect in the intestines as it has purgative properties because of its fiber content. It also acts as insulin-like properties to control blood sugar for diabetes prevention.

Ingredients: (serves 2-3 persons)

  • 2 tbsp oil
  • 2 cloves crushed garlic
  • 150 grams unwanted cut pork meats
  • 1 medium liced onions
  • 3 bunches of kangkong
  • 1/4 cup soy sauce
  • 2 tbsp vinegar
  • 3 pcs dried chillies(optional)
  • 1 tbsp sugar
  • 1/2 tsp pepper
  • pinchof salt

Procedures:

  • in a pan, heat oil and saute garlic and onions, add in pork and brown for 5 minutes or until tender. then add kangkong seasoned with salt & pepper and add the rest of the ingredients and simmer for 1 minute.
  • serve hot!!

Fish Cracklings (Fish Chicharon)


Fish Cracklings (1024x683)Chicharon? Fish Chicharon or cracklings……………….I am not sure if I will be posting this as it is made with fish skins. Well, these days lots of exotic foods arises into the market. So, lets consider this as one of them. one of rare food! Have you tried eating fish skins? Most of fish customers here in NZ loves to buy fish in fillets. So, it means fish heads, tails and skins are most likely going into rubbish. But we filipinos usually don’t throw anything on the fish. It has lots of use as the fish heads and bones can be used as fish broth or even a dish which I already posted such as sinigang na ulo-ulo or sour fish heads or pinangat na salmon head. I remember our old days in Japanese restaurant. We used to do this recipe everytime we cut a whole fish specifically salmon and tuna fish. Must try!

Ingredients:

  • 500 gms fish skins cut into strips
  • 1 cup flour
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 1/4 cup milk powder optional
  • oil for frying
Procedures:
  • In a container with cover, combine all ingredient together except fish skins, mix well.
  • Then Dip fish skins  in the flour mixture and cover. shake well allowing the fish skins to absorb the flour mixture.
  • In a deep-frying pan, heat oil and fry fish skins until crispy and golden brown
  • Best served with a vinegar sauce as dippings (vinegar + chilli plus salt and pepper)
  • Enjoy!!!!

Kid’s Sushi Platter


kids sushi platter (683x1024)Sushi Platter…………. This is what I missed doing, I worked in a Japanese sushi bar for more than 7 years. I think I made all kinds of sushi so far not to mention the “HOT” dishes on the Japanese menu. Still part of my daughter’s Kids menu, I now bring you my very own Kid’s Sushi Platter. This sushi is a combination of cooked teriyaki and vegetables as I decided not to use raw or fresh fish on my sushi as we will not consumed the food immediately. We will transport the food from the house to the party venue. Sometimes we need to consider this things as we need to practice food safety first as I will feed 35 children in this party. ……….Yum!!!…………….Did you know that dried seaweeds sheets or Nori is rich in iodine and iron and quite high in protein. It is also a good source of vitamin C, vitamin A, potassium, magnesium and riboflavin(B2). Not only does it have all these nutritional riches, it is also a low-fat food!

Ingredients:
  • 1 kilo chicken fillet cut in strips
  • Salt and pepper
  • 2 tbsp oil
  • sesame seeds
  • teriyaki sauce(see below recipe)

Procedures:

  • In a pan, heat oil and saute chicken until golden brown for approx 10 minutes. add in teriyaki sauce and simmer for another 5 minutes. then pour in sesame seeds upon serving

Teriyaki sauce

  • 1/2 cup soy sauce(kikoman)
  • 3 cups water
  • 100 gms of grilled pork bones (to get that smokey flavor)
  • 1/2 cup cornstarch dissolve in 1 cup water
  • salt & pepper
  • 1 medium onions
  • 1 cup sugar
  • 2 tbsp hondashe (japanese MSG)
  • 1 stalk of celery
  • carrots & potato peel (optional)

Rice:

  • 500 gms cooked japanese rice
  • (sushi rice mix: ratio: 3 vinegar + 1 sugar + little kikoman + little hondashe)

Veggies” Carrots and cucumber strips

Other filling: Crabs sticks

Procedures:

  • 1 nori or seaweed sheets & You will need Sushi mat roll and kikoman and wasabe
  • Just using your imagination, spread rice on nori sheets and place chicken teriyaki and veggies. roll over and cut into 8 to 10 pieces. You may also use other filling such as crabsticks, avocado and etc….
  • Have fun

Kid’s Party Chicken Barbeques


kids barbequed wings (683x1024)Kid’s Chicken Barbeque…………Still part of my daughter’s kids menu, I already post starter’s such as “fried wonton and vegetable sticks” and posted desserts such as fruit kebab and kids cupcake. Now lets go with my kid’s little main dish. Barbecue wings. (oooppss, sorry it’s not in order, should be starter, salad, main and desserts etc).  As we all know, most of the children can not say no to barbecues, we’ll my daughter can’t! To attract the children’s palate, I used banana ketsup as add-ons to my marinade mix, banana ketsup simply have a very good smell and sweet flavor once you grill your chicken barbeque. Must try!…………………………….Did you know that chicken is rich in selenium, another antioxidant-rich nutrient. Selenium in chicken has been shown to induce DNA repair in damaged cells and eliminate abnormal cells. This nutrient also activates an important antioxidant vital in cancer prevention, known as glutathione peroxidase, from proteins. Consuming chicken may help in the prevention of cancers.

Ingredients:

  • 1.5 kilogram chicken wings – cut in half
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 1/2 cup sprite or soda
  • 1/2 cup banana ketsup
  • 1 tbsp lemon or calamansi juice
  • 1 tbsp fish sauce
  • 1/2 cup white sugar
  • salt & pepper to taste

Procedures:

  • in a container, mix all ingredients except pork meat. mix well then add in chicken and rubbed evenly
  • Best grilled using charcoal. or just simply use oven barbeque.
  • best marinate for atleast 3 hours before grilling. brush the remaining marinade mix upon grilling your bbq..
  • Enjoy!!

Kid’s Crispy Wonton


Fried Wontons……………..This is one of my daughter’s favourite starter, as this is free everytime we buy in a famous takeaway shop here in NZ. So we decided to include this on her birthday menu as she loves anything fried and crispy(ooopps, I better watch out the fat/oil contents). Last post, I feature a very healthy vegetable sticks, this time I will be featuring “a not so healthy” option on your party menu. Sorry, it is fried so just take care of the fat and oil contents. (You need to drain it properly)…. But believe me, this is really awesome dude! Are you ready? Here we go………….

 

Ingredients: makes 60-80 pcs of fried wontons depending on the size

  • 350 gms pork minced
  • 100 gms small diced and peeled shrimps
  • 1/4 cup cornstarch
  • 1/2 cup bread crumbs
  • 1 medium minced onions
  • 1 tsp seasoning soy sauce
  • 2 pcs beaten egg
  • 1/2 salt
  • 1/2 tsp pepper to taste
  • 1 tbsp sesame oil
* 80 pcs wonton wrappers
Procedures:
  • In a mixing bowl, combine all ingredients together except shrimp , mix well.
  • Form a circle size approx a teaspoon of mixture and wrap over siomai wrapper. makes approx 80 pcs or even more depending on your size. smaller the better as the wonton might open when you fry.
  • Heat oil and fry until golden brown. serve with sweet chilli sauce

There is a competition were every group needs to design and create a futuristic dinner booth. And I am very happy to tell you guys that we won the first prize. Yes, the overall champion booth. Who knows this might be the start of a new generation that food in the future might come into a capsule. A flavored capsule which you can choose a wide variety of viand such as roast meats, vegetables, dessert, soups and etc. What you think?………..The lovely tomato flower curving was made by my wife!!!!!

Healthy Vegetable Sticks


Vegetables sticks…………….My post today is still part of my Daughter’s birthday Party Menu. My previous post were “fruit Kebab and Kid’s Birthday Cupcake”. Now let’s do a simple vegetable sticks with dips. There will be no cooking required on this post as I only cut does healthy vegetable sticks and just bought a dip in the supermarket. The dip was cheese as I want to attract kids to eat and dip this veggie sticks on my cheese dips.If you are again running out of idea what to serve on party, you can simply cut this vegetables and it can serve as your starter for any meal. Your guest will surely love this as it is very healthy option on you menu…….YUUUUMMMM!!!

Ingredients:

  • Basically any vegetables you want: such as carrots, cucumber, turnips, celery and etc
  • Dips: depends on your taste: you can choose cheese, aoili, sour cream and many more

Preparations:

  • Do it with at most love!
  • Cut the veggies as even as you can. Best served when chilled!
  • Technic, blanch into a very cold water before serving. You can enjoy the crunchiness!

Fruit Kebab…………We have this fruit dish when my daughter celebrated her 7th birthday here in NZ. The photo was taken by a professional photographer and top blogger raymund of angsarap.net. He’s a good friend of mine. Well, Back to the dish, When you want something healthy to go with your kids party, cocktail party or any event, you can try this dish. It has no cooking required as you can just stick on a barbeque stick any fruits you want. It is very easy as your kids can help you on your preparation as well. hhhmmmmm good bonding for you and your kids. My lovely wife made this fruit kebab………….Lets go healthy!!!!

Ingredients:

Basically any fruits you want. I use the following

  • Strawberry, grapes, melon, honeydew, pineapples
  • Just cut the fruits evenly.

Enjoy!!!!
