GP’s Oven Grilled Pork Ribs

1 x slab pork ribs, salt and pepper, 3 tbsp soy sauce, 3 tbsp raw sugar, 1/2 cup GP’ Kitchen Vinegar Dip and Marinade…

Procedures:

In a tray, rub all ingredients together and set aside for atleast 1 hr. pre-heat oven at fan grill settings at 250 degrees celcius. Oven will he really piping hot and Carefully place the tray inside oven and timed for 12-15 mins, flip and time for another 10 mins. Thats it, Yes, its easy as as that. Served with your favourite blanched or steamed vegetables and GP’s Kitchen Vinegar Dip and Marinade… enjoy!!!

GP’s LOMI Guisado


Hello guys…. I havent post for a while. Been busy for our small business. GP’s garlic chili oil. Its an all rounder condiment that will bring amazing flavour and spice to your meal. Just simply add it at the end of your dish. The garlic, combined with chillies and smoky paprika flavour will surely enhance your meal. Yuummmm. . . Back to the dish, its a pancit lomi guisado. Its one of truly filipino-asian inspired dish which is favourite on winter either snacks or dinner. You can find this dish in every corner small cafeteria in our country……I am so happy to share you once again this recipe………Did you know that egg noodle is a rich source of proteins. Your body uses protein to build and repair tissues. You also use protein to make enzymes, hormones, and other body chemicals. Protein is an important building block of bones, muscles, cartilage, skin, and blood.

ingredients: (serves 4-6 persons)

  • 2 tbsp oil
  • 3 cloves minced garlic
  • 1 medium minced onions
  • 4 pcs chicken drum sticks
  • 6-8 pcs shrimps
  • 100 gms chicken liver
  • 300 gms pancit lomi
  • 2 pcs eggs for beating
  • 4 pcs hard boiled eggs
  • 4-6 pcs squid ball
  • 1 tbsp soy sauce
  • 1 tsp of salt / pepper
  • 2 cups water or chicken broth
  • 1 medium carrots sliced
  • 2 bunch bok choy or 100 gms cabbage sliced
  • 1 stalk celery diced
  • 1 tbsp fish sauce
  • 1 stalk spring onions chopped

Procedures:

  • In a large sauce pan, heat oil and saute garlic and onions, add chicken and liver and simmer for about 5 minutes.
  • add in squid ball and seasoned with soy sauce, salt & pepper.
  • add the rest of the vegetables and ingredients and lomi then cook for another 5 minutes
  • add water and adjust your taste by adding fish sauce
  • Bring to a boil ..dont over cooked the vegetables.
  • Turn off heat and break in 2 pcs eggs and stir.
  • serve hot!!

Its as easy as one two three… as we continue to create recipe on our 11 spice hotchips powder/bbq rub, we would like to share this recipe to you guys. . . . But before that, we will go with some healthy benefits of what ingredients we were using…Did you know that this recipe is mainly made with lots of garlic. Garlic can improve a person’s immune system. It has anti-cancer components that can prevent colon cancer and stomach cancer. People with more garlic in their food intake or diet have less riskof colorectal cancer or pancreatic cancer. Garlic supplementation can also reduce the development of cancer cells among people with family history of breast, prostate and throat cancers. Also, it is found that aged garlic lowers heart and intestinal damage common to chemotherapy patients…

So here is the recipe:

1 whole garlic chopped

2 tbsp 11 spice hot chips powder

1/4 cup light soy sauce

Salt and pepper

1 whole lemon juice

1 kg pork chops

4 tbsp olive oil

1/2 cup water

Procedure:

1. Marinade by combining all ingredients together. (Mix all ingredients except pork and mix well, then combine pork) Let it set for 24 hours or overnight

2. Your choice- pan grill or bbq.

3. Brush with remaining marinade mix. Enjoy!!

Ingredients
4 chicken drumstick
4 chicken wings
Salt and pepper to taste
1 tbsp achuette powder
4 tbsp GP garlic vinegar marinade dip
2 tbsp brown sugar
2 tbsp olive oil
2 tbsp lemon juice
1 tbsp soy sauce

Procedures:
In a bowl, mix all ingredients and marinate chicken 12 hours or over night.
Grill in charcoal or pan grilled.
Serve hot with a GP marinade and dip sauce on the side.

Boodle fight……


Hi everyone. … its been a long time since i posted recipe. Been really busy as got a toddler now. Yes, we have a new member in the family. And shes really cute and very busy child. Her name is pepper by the way. …ok back to the recipe. I dont know if i will call this as a recipe as its a traditional food or way to celebrate a certain occaision. Its just any dish over the rice place in a banana leaf shared by numerous people. Just dont top the rice with soupy dishes as people will use their hands eating on this very long food table. We used to do it in fiesta, birthdays, even weddings or just normal group gatherings. As they say, its not the food, its not the place, its the companion and food that shared together. … happy eating!!!!

Chicken burger and garden salad



Just thought of sharing my boss meal. Every single day i cook different lunch meal for her. ….As we sell burger in the cafe but she doesnt want to eat carb, so decided to deconstruct it. It comes out nicely and well presented. As we need to eat with our eyes first.. Its yummy. Try my gluten free chicken burger with side garden salad…..

Recipe????

300 grams mince chicken, 1 pc egg, pinch garlic powder, salt and pepper, 1 small minces onions, 50gms minced red peppers, parsley, 2 tbsp gf flour…combine everything then form a patty. Then seared in a metal teflon pan with little oil. Bake for 10 mins…makes 2 or 3 patties..

Plating:

Your favourite garden salad. Mesclun, cucumber, red onions, olives, feta cheese optional. Plus olive oil, lemon and salt and pepper for dreasing.

Using your imagination, plate up cooled burger and salad…topped with aoili dressing and ketsup if you wish…. Yuuum!!!

Fish friday…… fish ball with soft boiled egg garden salad

Every friday, we filipino and catholics usually observed this tradition of having fish dish every friday. I would like to share my boss lunch today as I always cook for her different lunch every single day. Yes, my maths calculated that if I worked more than 2 years with her that means I already presented a dish of not less than 300 plates in a year(not 365days as I have days off-hahah)…….hmmmmm. evry single dish also becomes our special of the week…… try it….

Recipe?….. just mix of any greens you have in your fridge might be lettuce, mesculin add some tomatoes, cucumbers, onions carrots etc served smoked salmon and soft boiled egg…. dressing? Just a simple balsamic, olive oil, some chillies and hint of truffle oil…… try it!!!

My one is chorizo sausages, onions, capsicum herbs and spices plus my favourite garlic bread matched with a cup of coffee. This is a perfect breakfast for me…Yummm:……………Did you know that eggs are a very good source of inexpensive, high quality protein. More than half the protein of an egg is found in the egg white along with vitamin B2 and lower amounts of fat and cholesterol than the yolk. The whites are rich sources of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper. Egg yolks contain more calories and fat.

Ingredients:

3 eggs with 1/4 cup of cream, slices of sausages, onions, capsicum, salt and pepper, chopped parsley and chili flakes. must try…………

 

Courgettes and Corn Fritters


FritterCourgette and Corn Fritter……………….Who can say no to a freshly made – vegetarian, dairy free(without the sour cream topping) and a gluten free fritter? Part of going healthy on our restaurant, I am revising this classic corn fritter to a much healthier version by using little gluten free flour (rice flour) and loading up with some courgettes and other healthy vegetables…………..Did you know that courgettes is very rich in vitamin C, and we all know that our body needs a lot of vitamin C during the day to help us protect from some serious diseases. By adding this healthy courgettes in your diet, You might decrease the risk of having some cancers such as gallbladders, heart disease and stroke to name a few…….Eating healthy vegetables is a must to everyone’s diet. .. Do you eat vegetables?

Ingredients: no exact measurements as you can add any vegetables you want.

-Corns, eggs, gf flour, salt and pepper, courgettes, onions, chopped capsicum, thyme and rosemary little g flour

Procedures:

-combine all ingredients together, in a hot Teflon pan, pour in olive oil and fry in both sides

-you may serve tomato sauce or relish and sour cream on the side. yumm!!!

 

Classic Fettuccine Carbonara


DSC_0774Fettuccine Carbonara………A truly classic recipe! Back home, this is the first pasta I have ever known. I did not know that it will be as easy to prepare as it only needs bacon, cream, egg and salt and pepper.  some doesn’t even have cream. So, come in new zealand, I dont have this confident to bring this in our restaurant as it is very easy recipe that i am afraid no customer will appreciate and order this recipe. But my opinion was wrong, When I introduce it from the first day, it was a super blockbuster!!!! Well to make a little twist and non-traditional, i drizzle my carbonara with pesto sauce. just imagine, white creamy sauce blending with pesto-herbs sauce! yummm!!!!…………………Did you know that pesto sauce main ingredients is basil leaves? and basil leaves are Basil is also known to have extremely powerful antioxidant properties, especially when it is used in the form of an extract or oil. The natural antioxidants found in basil can protect the body against damage from free radicals, thereby preventing cellular aging, common skin ailments, and even most forms of cancer. Antioxidants are an important part of maintaining a healthy diet and lifestyle, and basil may be a safe and effective source of these potent, life-giving compounds.

Ingredients:

30 gms butter

120 grams cooked egg fettuccine noodles

1 pc egg

3 pcs streaky bacon (chopped and bit toasted)

50 ml cream

parmesan cheese

salt and pepper

drizzle with pesto sauce

garlic bread

 

Procedures:

in a teflon pan, pour in butter and bacon bits, add in egg fettuccine and pour in cream and seasoned with salt and pepper. simmer until its hot. drop in egg and remove from heat. drizzle with pesto and topped with parmesan cheese and garlic bread. serve hot!

Warm Seafood Salad…………..It is a combination of fresh grilled seafood of your choice served in a cold garden salad topped with poached egg accompanied by croutons and dressed with sweet chili sauce……Need some quick and easy healthy recipe? starters? salads?.. Well, here we go, I am sharing you one of the most popular dish that runs on summer to fall chef’s specials in our cafe. …….Did you know that seafoods is an excellent source of many important minerals, including iodine, zinc, potassium and phosphorus. It is also rich in many vitamins, especially the B group. Seafood is also good source of flourine, which in addition, well known role in keeping teeth healthy and help calcium loss from our bones.

 

Ingredients:

120 gms of marinara mix

20 ml sweet chili sauce

salt and pepper, thyme and marjoram

garlic croutons (french bread with herbed butter with crushed garlic)

Salad Greens (any greens of your choice)

1 poached egg

 

Preparations:

assemble salad in a plate, toast croutons and place on the plate together.

On a very hot teflon pan with olive oil, place in marinara mix, s/p, herbs and when its 100 % cooked throw in sweet chili sauce. and serve on your salad topped with poached egg

Ben Ten Chocolate Cupcakes


Ben Ten Cupcakes (1024x683)Cupcakes……….This is a Ben Ten Cupcakes we give as a birthday gift to my daughter’s classmate GAB who celebrated his 7th birthday few month ago. The cupcakes were super awesome. It was design by my wife. My very own Pastry Chef!  It is a super moist chocolate cupcake served with a chocolate cream cheese frosting! YUMMM!! Sinfully chocolatey!!!

Chocolate and Cream cheese frosting:

  • 200 grams cream cheese
  • 50 grams butter melted
  • 2 tbsp cocoa powder
  • 300 grams icing sugar

* Combine all ingredients together and mix using an electric mixer. mix until soft peak.

White Icing (ready-made) and some food color for topping

Ingredients: makes 20-25 pcs cup cake

  • 250 gms butter
  • 250 gms dark chocolate for melting
  • 3/4 cup caster sugar
  • 1/2 cup self raising flour
  • 1/2 cup bakers flour
  • 1/2 cup cocoa powder
  • 1/2 cup cream
  • 3 pcs eggs
  • 1/2 cup chocolate bits for filling
  • 1/2 cup walnuts

Procedures:

  • in a large plastic mixing bowl, combine dark chocolate and butter, microwave for 30 seconds then stir and back again for 30 seconds and stir. do this procedures until chocolate are melt. we don’t want to burn the chocolate.
  • add in eggs and beat. then add the rest of the ingredients. continue beating, this is a wet mixture.
  • In a muffin tray, spread sheets of muffin paper, and pour in chocolate mixtures half way.
  • Pre-heat oven at 170 celsius and bake for 8-12 minutes.
  • cool down and garnish with white icing. Design may vary depending on your occasion.

Chicken Fried Rice


Chicken fried rice……………Just want to share you one of my fried rice collection. Everytime I make a fried rice, I always re-use any leftover food. Well, instead of re-heating them as is, why not create a recipe out of it. This simple fried rice is more exciting to eat than a microwaved leftover rice. What do you think? Make sense?…………..

Ingredients:

  • Leftover rice
  • 3 cloves chopped garlic
  • 2 tbsp olive oil
  • salt
  • left over fried chicken – cut
  • some onion leeks
  • 3 pcs beaten eggs

Procedures:

  • In a non-stcik pan, scramble egg in little olive oil set aside. should be runny.
  • In the same pan, saute galic in little olive oil, add in rice and leftover chicken and scramble egg
  • seasoned with salt and add in onion leeks.
  • Serve hot

Lea’s Burger Patties for kids


Lea's Burger Patties (1024x683)Kids burger patties….. I will call this kid’s burger patties as this patties is loaded with meat and vegetables. Yes it is not a common 100% pure beef patties as i used lots of extenders such as vegetables specifically carrots, onions, potatoes, leeks and many more and I used lean pork mince instead of beef. Because my daughter hardly eat veggies so that’s why we hide it inside the burger. At first she is separating those tiny chopped veggies but since this is her regular meal n her lunch box at school, she doesn’t have time to do it. Now she love does tiny little veggies present in this burger patties. ……

Ingredients: makes 20-25 patties depending your desired size

  • 1 kilogram minced lean pork mince
  • 4 cloves minced garlic
  • 1 large minced onions
  • 1 big carrots small diced
  • 2 potatoes small diced
  • onion leeks chopped
  • 1 cup bread crumbs
  • 2 pcs eggs
  • 1 tsp sesame oil
  • 1/2 tsp thyme
  • 2 tbsp seasoning soy sauce
  • salt & pepper to taste

Procedures:

  • In a bowl, mix all ingredints together and form a patties at approx 80-100 gms each
  • Then place in a container and freeze. last up to 3-4 weeks.
  • Method of cooking – pan-fried or grill

Steak on Skewers


DSC_0506…………..Just introducing one of the favourite dish back home in the Philippines. Inspired by my first proper restaurant work place, I would like to share this plate made of rump steak and alternate seasonal veggies served in a bed of rice pilaf……………..Watch out for more ala carte dishes!!!!
