GP chicken bbq / Inasal

And most of all easy to prepare and execute. Im very happy to share you our homemade chicken bbq recipe

Ingredients
4 chicken drumstick
4 chicken wings
Salt and pepper to taste
1 tbsp achuette powder
4 tbsp GP garlic vinegar marinade dip
2 tbsp brown sugar
2 tbsp olive oil
2 tbsp lemon juice
1 tbsp soy sauce

Procedures:
In a bowl, mix all ingredients and marinate chicken 12 hours or over night.
Grill in charcoal or pan grilled.
Serve hot with a GP marinade and dip sauce on the side.

Chicken Fried Rice


Chicken fried rice……………Just want to share you one of my fried rice collection. Everytime I make a fried rice, I always re-use any leftover food. Well, instead of re-heating them as is, why not create a recipe out of it. This simple fried rice is more exciting to eat than a microwaved leftover rice. What do you think? Make sense?…………..

Ingredients:

  • Leftover rice
  • 3 cloves chopped garlic
  • 2 tbsp olive oil
  • salt
  • left over fried chicken – cut
  • some onion leeks
  • 3 pcs beaten eggs

Procedures:

  • In a non-stcik pan, scramble egg in little olive oil set aside. should be runny.
  • In the same pan, saute galic in little olive oil, add in rice and leftover chicken and scramble egg
  • seasoned with salt and add in onion leeks.
  • Serve hot

Spicy Pepsi Chicken


Spicy Chicken on rice (1024x683)Pepsi Chicken………………..This is just out of curiosity recipe. Since I posted Coca-cola chicken maybe 2 years ago which turns out to be one of my popular post during that year. It came to my mind that i want to try it again. Because when you do food blogging at home, everyday is a different meal for us as I post every single recipe I cook at home. So back to the coca cola chicken, I was in the middle of cooking where everything is ready; I saute the onions, garlic ginger chicken, I add the condiments and last would be the coke as my substitute for water. When I opened my cup board. I saw ….. Yes I saw a PEPSI!!! and Its PEPSI MAX, no sugar! Wow, I said OMG! Since I think it is a soda as well minus sugar. I give it a try! Sorry Coca cola, you didn’t give me an advertisement for my post! and it taste good, maybe even better! (hahahaha coke) well, I like both Pepsi and Coke!…….Must try!

Ingredients:

  • 3 cloves garlic
  • 50 gm of thinly sliced ginger
  • 1 kg chicken thigh and legs
  • 1/2 cup soy sauce
  • 1/4 vinegar
  • 3 pcs bay leaves
  • pepper corn and salt
  • 1 tsp sesame oil
  • 1 cup pepsi(softdrinks)
  • 1 tbsp dried chillies(optional)
  • 1 tbsp sugar
  • dried chillies

Procedures:

  • Saute and brown chicken in a heavy skilletby adding a little oil
  • Add vinegar, soy sauce, garlic, ginger, bay leaves, sugar, salt, peppercorn, dried chillies and pepsi.
  • Bring to a boil, simmer for 20 mins
  • Cover and let simmer until it becomes tender. and all the juice is absorbed. add sesame oil before serving
  • Enjoy!!!!!!!!!

Kid’s Sushi Platter


kids sushi platter (683x1024)Sushi Platter…………. This is what I missed doing, I worked in a Japanese sushi bar for more than 7 years. I think I made all kinds of sushi so far not to mention the “HOT” dishes on the Japanese menu. Still part of my daughter’s Kids menu, I now bring you my very own Kid’s Sushi Platter. This sushi is a combination of cooked teriyaki and vegetables as I decided not to use raw or fresh fish on my sushi as we will not consumed the food immediately. We will transport the food from the house to the party venue. Sometimes we need to consider this things as we need to practice food safety first as I will feed 35 children in this party. ……….Yum!!!…………….Did you know that dried seaweeds sheets or Nori is rich in iodine and iron and quite high in protein. It is also a good source of vitamin C, vitamin A, potassium, magnesium and riboflavin(B2). Not only does it have all these nutritional riches, it is also a low-fat food!

Ingredients:
  • 1 kilo chicken fillet cut in strips
  • Salt and pepper
  • 2 tbsp oil
  • sesame seeds
  • teriyaki sauce(see below recipe)

Procedures:

  • In a pan, heat oil and saute chicken until golden brown for approx 10 minutes. add in teriyaki sauce and simmer for another 5 minutes. then pour in sesame seeds upon serving

Teriyaki sauce

  • 1/2 cup soy sauce(kikoman)
  • 3 cups water
  • 100 gms of grilled pork bones (to get that smokey flavor)
  • 1/2 cup cornstarch dissolve in 1 cup water
  • salt & pepper
  • 1 medium onions
  • 1 cup sugar
  • 2 tbsp hondashe (japanese MSG)
  • 1 stalk of celery
  • carrots & potato peel (optional)

Rice:

  • 500 gms cooked japanese rice
  • (sushi rice mix: ratio: 3 vinegar + 1 sugar + little kikoman + little hondashe)

Veggies” Carrots and cucumber strips

Other filling: Crabs sticks

Procedures:

  • 1 nori or seaweed sheets & You will need Sushi mat roll and kikoman and wasabe
  • Just using your imagination, spread rice on nori sheets and place chicken teriyaki and veggies. roll over and cut into 8 to 10 pieces. You may also use other filling such as crabsticks, avocado and etc….
  • Have fun

Kid’s Party Chicken Barbeques


kids barbequed wings (683x1024)Kid’s Chicken Barbeque…………Still part of my daughter’s kids menu, I already post starter’s such as “fried wonton and vegetable sticks” and posted desserts such as fruit kebab and kids cupcake. Now lets go with my kid’s little main dish. Barbecue wings. (oooppss, sorry it’s not in order, should be starter, salad, main and desserts etc).  As we all know, most of the children can not say no to barbecues, we’ll my daughter can’t! To attract the children’s palate, I used banana ketsup as add-ons to my marinade mix, banana ketsup simply have a very good smell and sweet flavor once you grill your chicken barbeque. Must try!…………………………….Did you know that chicken is rich in selenium, another antioxidant-rich nutrient. Selenium in chicken has been shown to induce DNA repair in damaged cells and eliminate abnormal cells. This nutrient also activates an important antioxidant vital in cancer prevention, known as glutathione peroxidase, from proteins. Consuming chicken may help in the prevention of cancers.

Ingredients:

  • 1.5 kilogram chicken wings – cut in half
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 1/2 cup sprite or soda
  • 1/2 cup banana ketsup
  • 1 tbsp lemon or calamansi juice
  • 1 tbsp fish sauce
  • 1/2 cup white sugar
  • salt & pepper to taste

Procedures:

  • in a container, mix all ingredients except pork meat. mix well then add in chicken and rubbed evenly
  • Best grilled using charcoal. or just simply use oven barbeque.
  • best marinate for atleast 3 hours before grilling. brush the remaining marinade mix upon grilling your bbq..
  • Enjoy!!

Futuristic Menu


Futuristic Menu (1024x683)Food in the future……………………My fellow bloggers, I would love to share you what we did in our 2012 Christmas Party in our Church. There is a competition were every group needs to design and create a futuristic dinner booth. And I am very happy to tell you guys that we won the first prize. Yes, the overall champion booth. Who knows this might be the start of a new generation that food in the future might come into a capsule. A flavored capsule which you can choose a wide variety of viand such as roast meats, vegetables, dessert, soups and etc. What you think?………..The lovely tomato flower curving was made by my wife!!!!!

Wicked Wings


Chicken Wings………who can say no to a simple fried chicken, well I cant! This is my version of kfc’s wicked wings. My recipe has a twist of spicy and salty. Yuummmm haaaa!!!!!

Ingredients:

– 1 kilo chicken wings or nibbles
– 1 cup flour
– salt, pepper, cayenne, egg and milk powder
– oil for frying

Procedures:

In a deep frying pan, heat oil and fry chicken until golden brown. You can served with gravy or a just a ketsup…. Enjoy!!!!!

Lemon and Herb Chicken Wings


Lemon and Herb Chicken from “Nandos Restaurant”….. Just to promote our favourite chicken barbeque restaurant here in NZ. I am happy to share you once again this chicken barbeque recipe.  It is my version of “Nandos” Lemon and Herb Chicken. It is a combination of lemon and chillies and different herbs. (Hey nandos, you might want to give me some food voucher for this free ads, hahaha LOL) Yumm!!!!! Who can say no to barbeque, well I cant!!! Must try!

Ingredients:

  • 1 kilo chicken wings (on stick)
  • salt and pepper
  • 1/4 cup olive oil
  • 1 tbsp mix herb of thyme, marjoram and rosemary
  • juice from 3 pcs of lemon
  • some chillies, chopped and depends how hot and spicy you want.
  • 1/2 cup banana ketsup.

Procedures:

  • In a container with cover, combine all ingredients together and rubbed the chicken. Marinate for a minimum of two hours or better overnight.
  • Best grilled using charcoal or simply in oven.
  • Enjoy!

Chicken Pares


Pares……….From the famous beef pares with fried rice. I come up with an idea cooking it to chicken. Well chicken is one of my favorite meat. Almost all the ingredients are the same with my beef pares. Once this meal is cooked, if you love the asian dish smell, definitely after reading this post, you will try to cook this recipe. I love it!!!!

Ingredients: good for 10 persons

  • 2 tbsp oil
  • 2 kl chicken cut in portion size
  • 3 cloves garlic crushed
  • 1 large onions sliced
  • 4 cups water
  • 5 pcs star anise
  • 1/4 cup brown sugar
  • 1 tbsp peppercorn
  • 1 tsp salt
  • 1/2 cup dark soy sauce
  • 2 tbsp vinegar
  • 3 tbsp hoisin sauce
  • 1 stalk celery (for boiling) don’t cut
  • 2 thumb size ginger crushed.
  • onion leeks for toppings
  • 1 tbsp toasted garlic
  • fish sauce for adjusting taste

Procedures:

  • In a large pan, boil chicken with water, star anise, dark soy sauce, 1 whole stalk celery, vinegar, brown sugar and salt and pepper. boil for 15 minutes or until tender.
  • In a sauce pan, heat oil and saute garlic, onion and ginger. add in hoisin sauce then pour on the chicken mixture. Boil chicken until tender or sauce is reduce. you can adjust your taste by adding fish sauce
  • Serve with garlic rice.

White Chicken Casserole


White Chicken Casserole………….One of the simplest way to have when you have a big party or gathering is to cooked your chicken in this simple casserole style. It is a one dish meal that includes meat and healthy vegetables in a creamy base recipe. We served this food mostly in banquet or buffet back in the Philippines. Wondering why? As I mentioned before in my previous blog, chicken are all pre-cooked in our banquet kitchen, so we can play with the vegetables. You can also cook this different style by changing the cream into tomato sauce or soya sauce base…..Must try!!!

Ingredients: good for 4-6 persons

  • 1 whole chicken (cut in portion size)
  • 1 tbsp chopped ginger
  • 1 small white onions chopped
  • 3 cloves garlic
  • salt & pepper to taste
  • 3 pcs potato diced
  • 1 pc medium carrot diced
  • 2 tbsp oil
  • 1 stalk onion leeks
  • 1/2 cup fresh cream
  • 1 pc red and green capsicum

procedures:

  • In a pan, heat oil and saute garlic, onion and ginger. saute well then add in chicken and let it brown(saute approx 5-8 minutes). then seasoned with salt and pepper
  • Add in potatoes and carrots and simmer for another 5 minutes. then add in capsicum. simmer for another 2 minutes. adjust taste by adding salt & pepper
  • Add in onion leeks and cream then remove from heat. don’t boil cream.
  • Serve hot!!!

Addidas(Adobo paa ng manok)


Addidas……….It is not the brand of shoes as you are thinking right now, its a name of dish we called when we cook chicken feet in our place. This is a popular appetizer back home specially for “gin bulag” or “tropang emperaning” (for Gin and brandy drinker). Usually cooked adobo style with a little spicy. For those who still doesnt know what I mean for “adobo style” – it is Filipinos all time favourite dish maybe made with pork, chicken or some exotic dish like livers, internal organs of pork and etc. Adobo literally is a method of cooking made with garlic, onions, soy sauce, vinegar and sugar. It is a sweet, salty sour dish……………………..Did you know that chicken feet when boiled produces a gelatinous like soup stock. Studies saud that this soup stock is very good source of cartilage-building proteins and amino acids that are body needed. Amino acids helps building muscles and strong bones.

Ingredients:

  • 3 tbsp oil
  • 3 cloves garlic
  • 1 kg chicken feet (first layer of skin removed)
  • 1/2 cup soy sauce
  • 1/4 vinegar
  • 3 pcs bay leaves
  • pepper corn and salt
  • 1/4 cup water
  • 3 tbsp brown sugar

Procedures:

  • In a non-stick pan, place oil and saute chicken feet until brown, add vinegar, soy sauce, garlic, bay leaves, sugar, salt, peppercorn and water.
  • Bring to a boil, simmer for 20 mins
  • When the juice is absorbed add another 1/4 cup of water.
  • Cover and let simmer until chicken feet becomes tender. and all the juice is absorbed
  • Serve hot and Enjoy!!!!

Curry Fried Chicken


Curry……..I got this recipe from a magazine (forgot the title) while I am waiting for my daughters swimming lesson.  I am very intrigue because usually curry comes with a lots of sauces.  So when I got home, I am very eager to try it since I am planning for a chicken dish. It is really nice, the flavour is compact and  it is best with chips. So I have an instant curry chicken and chips……………..Did you know that curry powder is actually a mixture of many number of spices, one main spice in most curry powders is turmeric. This is the spice that gives curry it’s yellow color and is also responsible, at least in part, for some of the health benefits of curried dishes. They said turmeric is 8 times stronger than vitamin  C and helps boost our immunity, maintains good cholesterol level and lastly, put brakes your aging….

Ingredients: good for 3 to 4 persons

  • oil for frying
  • 6 pcs chicken thighs
  • salt & pepper
  • 1 tbsp mild curry powder
  • 1/4 cup coconut cream
  • 2 cloves garlic crushed

Procedures:

  • in a container, place chicken and rubbed with garlic, salt & pepper, curry powder and coconut cream. marinate for about 1 hour.
  • In a frying pan or deep fryer, fry chicken wings until golden brown.
  • serve with steamed rice and hot sauce
  • enjoy!!

Chicken Wings in chilli soy bean sauce


Chicken wings…………….How spicy can you go? This chicken wings is very similar to preparation of buffalo wings. If you run out of an idea and want to add a very good starter or appetizer while having a drink of beer, wine or hard drinks. This is a good idea. Just fried the chicken and toss with chilli and soy bean sauce. If you are having a yam cha at home with friends, this is a a quick add-ons to your yam cha menu. We just had a yam cha of steamed bok choy, pork siomai, chicken feet and this chicken wings with chilli soy bean sauce……………………….Did you know that soy bean paste often is used as a vegetable dip like Westerners use with celery and carrot sticks. However, it’s more common uses are as a stock for soups or stews or when mixed with other ingredients like sesame oil and garlic. Some consume this soy bean paste with grilled meat wrapped in a vegetable leaf such as red lettuce. Soy bean paste is one of the most popular korean ingredients.

Ingredients: serves 4-6 persons

  • 6 pcs chicken wings (cut into half)
  • oil for frying
  • salt and pepper
  • 1/2 cup soy bean paste
  • 1 tbsp seasoning soy sauce
  • dash of sesame oil

Procedures:

  • Seasoned chicken with salt and pepper
  • In a deep fryer, fry chicken until golden brown. set aside
  • In a mixing bowl with cover, stir in soy bean paste, seasoning soy sauce and sesame oil. Add in chicken wings and toss with the sauce. you can cover and shake well.
  • Serve with yam cha or as an appetizer.

Chilli Chicken Feet


Chilli Chicken Feet…………………This is one of my wife favourite food in yam cha dimsum and dampling restaurant. I had a little funny story about this dish. I had a workmate (he’s a kiwi), I remember when we had a gathering in a chinese yam cha restaurant(might be our christmas party), When he say everybody is eating this chicken feet, he askes us, “chicken had so many parts, you can eat wings, legs and thigh, why do you eat the chicken feet? (with a very disgusting face) . How about you guys? have you tried eating chicken feet?…………………………Did you know that I have used star anise to make this dish very flavourful, very asian? Did you know that star anise has been used for centuries to relieve abdominal discomfort. Specifically, 1 star anise to 1 cup boiling water and mixed with 1 tsp. of honey and taken internally to relieve abdominal cramps, indigestion, gas, bloating and nausea………….

Ingredients: serves 6-8 persons

Chicken Feet Breadings

  •  20 pcs chicken feet
  • 2 cups flour
  • Oil for frying
  • 2 pcs eggs beaten
  • salt and pepper

– Deep chicken into flour and dip in egg and dip in flour again. fry until golden brown. set aside.

Sauce:

  • 2 tbsp oil
  • 3 pcs chopped garlic
  • 1 medium chopped onion
  • 4 pcs star anise
  • 2 tbsp hoisin sauce
  • 4 tbsp churasca hot sauce
  • 4 tbsp sweet chilli sauce
  • 1 cup water
  • salt and pepper
  • 1 tsp sesame oil
  • 1 tbsp corn flour dissolve in 1 cup water

Procedures:

  • In another pan, heat oil and saute garlic and onion. pour in water and the rest of the ingredients except the corn flour mixture. Then Add in chicken feet and boil for 10 minutes in low heat settings. Add in corn flour mixture then turn off fire when sauce is thickened.
  • Serve hot!!
