Chicken burger and garden salad



Just thought of sharing my boss meal. Every single day i cook different lunch meal for her. ….As we sell burger in the cafe but she doesnt want to eat carb, so decided to deconstruct it. It comes out nicely and well presented. As we need to eat with our eyes first.. Its yummy. Try my gluten free chicken burger with side garden salad…..

Recipe????

300 grams mince chicken, 1 pc egg, pinch garlic powder, salt and pepper, 1 small minces onions, 50gms minced red peppers, parsley, 2 tbsp gf flour…combine everything then form a patty. Then seared in a metal teflon pan with little oil. Bake for 10 mins…makes 2 or 3 patties..

Plating:

Your favourite garden salad. Mesclun, cucumber, red onions, olives, feta cheese optional. Plus olive oil, lemon and salt and pepper for dreasing.

Using your imagination, plate up cooled burger and salad…topped with aoili dressing and ketsup if you wish…. Yuuum!!!

Gluten free Bacon and egg pie

My version of bacon and egg pie……I made my pie gluten free as i did not use any savoury flour base pastry. I wrapped it with streaky bacon which serves as my base pastry making it an option to consider for your gluten free diet. To make it more healthy, i added wilted spinach, caramelized onions and roast potatoes to make a reconstructed gluted free bacon and egg pie

Ingredients: roast potatoes, caramelized onions, wilted spinach, streaky bacon, salt and pepper, fresh thyme, gluten free cheese, fresh cream and eggs.

Procedures: assemble everything using yiur imagination in a muffin tins. Finish with 1 egg on top.  Bake for 160 degrees at 20 minutes. Enjoy

Fish friday…… fish ball with soft boiled egg garden salad

Every friday, we filipino and catholics usually observed this tradition of having fish dish every friday. I would like to share my boss lunch today as I always cook for her different lunch every single day. Yes, my maths calculated that if I worked more than 2 years with her that means I already presented a dish of not less than 300 plates in a year(not 365days as I have days off-hahah)…….hmmmmm. evry single dish also becomes our special of the week…… try it….

Recipe?….. just mix of any greens you have in your fridge might be lettuce, mesculin add some tomatoes, cucumbers, onions carrots etc served smoked salmon and soft boiled egg…. dressing? Just a simple balsamic, olive oil, some chillies and hint of truffle oil…… try it!!!

Hungry for breakfast?……Try an omelette. Its a quick and easy breakfast as you can add anything you want. My one is chorizo sausages, onions, capsicum herbs and spices plus my favourite garlic bread matched with a cup of coffee. This is a perfect breakfast for me…Yummm:……………Did you know that eggs are a very good source of inexpensive, high quality protein. More than half the protein of an egg is found in the egg white along with vitamin B2 and lower amounts of fat and cholesterol than the yolk. The whites are rich sources of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper. Egg yolks contain more calories and fat.

Ingredients:

3 eggs with 1/4 cup of cream, slices of sausages, onions, capsicum, salt and pepper, chopped parsley and chili flakes. must try…………

 

Chicken tandoori on ciabatta


Just sharing one of the most popular sandwiches I introduce here on NZ cafe…. Its a marinated tandoori chicken with mayonaise and roasted peppers served in mesculin salad on ciabatta bread. Best when pressed in panini grill….yummm!!!!

Mini quiche – pumkin feta and spinach (gluten free)


mini quicheAnother options for a healthy snacks – Pumpkin , feta and spinach. Just made from the fresh vegetable ingredients such as pumpkin (roasted) and blanched spinach. Assembled together in a mini muffin tins. Its like putting your favourite omelette into a muffin tins… Yumm!!!!! ……………… Did you know that spinach nutrition is amazing. The calcium content in spinach strengthens our bones. The A and C vitamins in spinach plus the fiber, folic acid, magnesium and other nutrients help control cancer, especially colon, lung and breast cancers. Folate also lowers the blood levels of something called homocysteine, a protein that damages arteries. So spinach also helps protect against heart disease. Ingredients and Preparations:

Roast pumpkin into small dice seasoned with salt and pepper, Blanch spinach, beaten eggs , some feta cheese.

Assemble all ingredients into a mini muffin tins, pour in beaten eggs and feta cheese. Bake for 5-8 minutes or until ready. Carefull eggs are east to cook. Enjoy!

Thai Salmon Kebabs


salmon kebabsJust a simple recipe “catch of the day” – Thai Salmon Kebabs!…….This turns to be one of the popular dish into my work place. Sometimes great dish are made from simple ideas. Easy to prepare, not much funcy ingredients with the food but it is loaded with healthy nutrients that you need in your everyday diet. YummMM!!!!! ……………….Did you know that salmon is the healthiest food in the planet? Aside from its high content of omega-3 fatty acids, it is also a good source of Vitamin D as well. Vitamin D has been shown to play a crucial role in lowering the risk of several types of cancer, including breast, prostate, and colorectal cancer. Salmon contains particularly high levels of vitamin D and selenium, which is also associated with prevention of certain types of cancer, including colorectal cancer.

Ingredients and preparations:

Fresh salmon cubes, onions and slices of courgettes or any vegetables you have in fridge. Using your imagination stick in all ingredients together and seasoned with salt and pepper, little bit of thai sweet chili sauce. That’s it! grilled or bake!

Enjoy!!! Great for parties and even everyday meal!

Gluten Free Dairy Free Veggie Fritata


DSC_0581I am happy to share you guys one of the recipe we did last night when we had a big event in our work place. It is a healthy recipe for those conscious people on their diet. This recipe is loaded with all that healthy nutrients you need without sacrificing your crave to your favourite dish. Lots of vegetables on this meal. So here are the recipe, lets go and eat healthy!!!!! …….Watch out for more!!! This recipe is mainly made with pumpkins  …………..Did you know that pumpkins are also high in Lutein & Zeaxanthin which protect the eyes against free radical damage and prevent formation of cataracts and degeneration of the eye tissues….

Ingredients: Makes atleast 6 standard muffin tins

100 grams roasted pumpkin, 1 pc dice roasted carrots, 1 stalk dice roasted celery, 1 pc dice roasted onions, salt and pepper, 6 pcs of eggs, some chopped spinach, chives for garnis

Procedures:

Using your creative imagination, assemble all ingredients in muffin tins and pour with beaten eggs (seasoned all your roasted veggies with salt and pepper and some mix herbs)

Bake at 170 degrees at 10-12 minutes or until ready (eggs are easy to cooked so watch out carefully)

Enjoy and serve hot
