Kamto Soup (beef brisket soup)
Kamto….If you havent heard about this recipe, it’s a common dish in pares mami house. It is very similar to nilagang baka (beef soup) with the absence of some ingredients. The soup is made with boiled beef brisket, onions, ginger and star anise. you can add your favourite green leafy vegetables if you want. This is the soup base for almost all mami they serve. Like for instance, You can create a beef brisktet with egg noodle soup in an instant by adding this soup stock……………..Did you know that beef is the best source of zinc, which is helpful for preventing the damage to blood vessel walls, which can contribute to atherosclerosis and is also needed for the proper functioning of immune system. Beef is also rich in phosphorous and iron. Phosphorous is necessary for strong teeth and bones and Iron helps carry oxygen in the blood, to all cells and muscles and prevents fatigue.
Ingredients: serves 3-4 persons
- 1.5 liter water
- 1 kilo beef brisket
- 3 pcs star anise
- 1 thumb size crushed ginger
- 1 tsp peppercorns
- 1 tsp salt
- 1 tbsp fish sauce
- 1 stalk of celery (do not cut)
- 2 pcs potato quartered
- 1 bunch bok choy or petsay
Procedures:
- In a large sauce pan, pour in water and boil beef and seasoned with peppercorns, star anise, ginger and salt. Bring to boil and cook for 45 minutes or until beef is tender.
- Place potato and cook for 10 minutes. then before serving, add in petsay or bokchoy and adjust taste by adding fish sauce. remove celery before serving
- Serve hot!!
Pares and Fried Rice(Pinoy Style Beef Brisket)
pares…………this dish made me remember our all time favourite pares mami house back home. The COCOY”S Pares….When me and my wife are lazy to cook, once a week we always dine to that small restaurant. Aside form it’s reasonable price, they offer a great serving that is enough for us(wow, Cocoys that was a great advertisement from your part) This dish usually comes with a serving of the best garlic fried rice in town. I love this PARES!!!!………………….Did you know that star anise is one of the main ingredients of this recipe. It gives the distinctive taste of this dish. Star anise are also known for some of its healing properties. The anti-bacterial and anti-fungal properties of star anise is useful in the treatment of asthma, bronchitis and dry cough. For this reason, some cough mixtures contain star anise extract. Star anise can also be used as for its sedating properties to ensure a good sleep. Star anise can also be used as a natural breath freshener…..
Ingredients: good for 10 persons
- 2 tbsp oil
- 1.5 kl beef brisket cut in cubes
- 3 cloves garlic crushed
- 1 large onions sliced
- 4 cups water
- 5 pcs star anise
- 1/4 cup brown sugar
- 1 tbsp peppercorn
- 1 tsp salt
- 1/2 cup dark soy sauce
- 2 tbsp vinegar
- 3 tbsp hoisin sauce
- 1 stalk celery (for boiling) don’t cut
- 2 thumb size ginger crushed.
- onion leeks for toppings
- 1 tbsp toasted garlic
- fish sauce for adjusting taste
Procedures:
- In a large pan, boil beef with water, star anise, dark soy sauce, 1 whole stalk celery, vinegar, brown sugar and salt and pepper. boil for 45 minutes or until tender. set aside and let it cool. and place in fridge. This will allow you to remove cold fat from the beef. As brisket usually comes with lots of fat. then remove celery
- In a sauce pan, heat oil and saute garlic, onion and ginger. add in hoisin sauce then pour on the beef mixture. BOil beef until tender or sauce is reduce. you can adjust your taste by adding fish sauce
- Serve with garlic rice.
Beef Flank with Egg Noodle Soup
Beef flank with egg noodle soup…, everytime we go to hongkong-chinese restaurant, this is one of our favorite item on the menu. It’s a huge serving of noodle soup that can be enough for two people.(I think almost saturday after church we go there and order this)….Did you know that beef is a good source of zinc, which is helpful for preventing the damage to blood vessel walls, which can contribute to atherosclerosis and is also needed for the proper functioning of immune system…and egg noodles are rich in iron, calcium and vit.A..
Ingredients per bowl:
- 80 gms egg noodles
- 120 gms cooked beef brisket with carrots
- 2 pcs of bok choy leaves
- approx 1 1/2 cup of beef soup stock
- toasted garlic
Ingredients for Beef Brisket: serves 6-8 persons
- 3 cloves garlic (crushed)
- 1 medium onions (sliced)
- 1 kl beef brisket (cut in bite size)
- 1 cup of water
- 1/2 cup kikoman / soy sauce
- 1/4 cup red bean curd
- 1/2 cup hoisin sauce
- 3 pcs cinnamon bars (wrapped in a tea bag)
- 5 pcs star anise
- 1/4 cup sugar
- 1 stalk celery (chopped)
- 2 pcs carrots (sliced bite size)
- Salt & pepper to taste
- slices of onion leeks for toppings
Procedures:
- In a large sauce pan, bring to boil beef, water, celery, star anise, cinnamon bars & onions for 30 minutes or until beef is tender.
- In a separate pan, saute garlic, hoisin sauce, red bean curd, carrots and seasoned with salt & pepper, kikoman, sugar.
- remove cinnamon bars and add in your sautéed ingredients. Boil for another 15 minutes or until sauce is thickened.
- You can serve in a bowl of steamed rice or topped to egg noodle soup and garnish with onion leeks.

Beef Brisket
Beef Brisket…this dish is very similar to philippines’ “PARES”, ..Brisket is a popular food in chinese restaurant and takeaways…You can do a lot of meal using this beef brisket, you can top it on egg noodle soup, some serve it on a stir-fry vegetables and many more… Did you know that beef is a good source of protein, cholesterol, sodium, VitaminB6, Vitamin B12, zinc, iron, phosphorus, niacin, iron and selenium. The protein in Beef helps in providing strength to the body and helps in building muscles.
Ingredients: serves 6-8 persons
- 3 cloves garlic (crushed)
