White Chicken Casserole


White Chicken Casserole………….One of the simplest way to have when you have a big party or gathering is to cooked your chicken in this simple casserole style. It is a one dish meal that includes meat and healthy vegetables in a creamy base recipe. We served this food mostly in banquet or buffet back in the Philippines. Wondering why? As I mentioned before in my previous blog, chicken are all pre-cooked in our banquet kitchen, so we can play with the vegetables. You can also cook this different style by changing the cream into tomato sauce or soya sauce base…..Must try!!!

Ingredients: good for 4-6 persons

  • 1 whole chicken (cut in portion size)
  • 1 tbsp chopped ginger
  • 1 small white onions chopped
  • 3 cloves garlic
  • salt & pepper to taste
  • 3 pcs potato diced
  • 1 pc medium carrot diced
  • 2 tbsp oil
  • 1 stalk onion leeks
  • 1/2 cup fresh cream
  • 1 pc red and green capsicum

procedures:

  • In a pan, heat oil and saute garlic, onion and ginger. saute well then add in chicken and let it brown(saute approx 5-8 minutes). then seasoned with salt and pepper
  • Add in potatoes and carrots and simmer for another 5 minutes. then add in capsicum. simmer for another 2 minutes. adjust taste by adding salt & pepper
  • Add in onion leeks and cream then remove from heat. don’t boil cream.
  • Serve hot!!!

Chicken Afritada


Chicken Afritada..It’s a casserole made of tomato sauce combined with vegetables……If you will cook this using PORK- it will be menudo, If BEEF -it’s  Beef Kaldereta , If seafood – maybe callos…If I forgot to mention some, please do help me?, In some countries, they might have different ways to cook their casserole using tomato sauce. So, please tell me, how do you cook your casserole?………Did you know that tomatoes offer enormous health benefits for you, especially “cooked” tomatoes. Tomatoes are in the fruit family and have tons of vitamins and minerals in them that your body needs. Tomatoes are rich in lycopene. Some studies revealed lycopene and eating tomatoes could protect against many types of cancer, with the higher protection going to prostrate, lung, and stomach cancer.

Ingredients: serves 4-6 persons

  • 1 kilo chicken cut in serving portions
  • 2 tbsp oil
  • 4 cloves minced garlic
  • 1 medium white onion
  • 1/2 cup tomato sauce
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 3 pcs bay leaves
  • 1 large potato big dice
  • 1 large carrots big dice
  • 1 tbsp cornstarch dissolve in 1 cup water
  • 1 pc bell pepper dice
  • 1 pc chicken sausage (optional) 

Procedures:

  • Ina large saucepan, heat oil and saute garlic and onions then add in chicken and saute and brown for 10 minutes allowing all the chicken flavor to come out. season with salt and pepper.
  • Add in potato, carrots, tomato sauce and soy sauce then simmer for 5 minutes.
  • Add in chicken sausage, bay leaves and bell pepper and boil for 5 minutes.
  • Then pour in cornstarch mix and simmer for 2 minutes and remove from heat
  • Serve hot!!!

Kalderetang baka(beef casserole)


Kalderetang baka…whew!!! one of my favorite filipino dishes, If you use pork meat – its called menudo, if chicken – Its apritada…there are many type of cooking method of beef kalderata. saute or “sinangkutsa”..I’ve used the traditional one(sinangkutsa)…..Did you know that beef is a good source of zinc, which is helpful for preventing the damage to blood vessel walls, which can contribute to atherosclerosis and is also needed for the proper functioning of immune system.It can also help reduce heart cause related diseases.

Ingredients: serves 4-6 persons

  • 500 gms Beef brisket & 500 gms beef with bones (bite size)
  • 2 pcs potatoes (big diced)
  • 1 pc carrots (big diced)
  • 1 pc tomato
  • 2 cloves garlic (crushed)
  • 1 med onions (sliced)
  • 1/2 cup tomato sauce
  • 1/2 cup water
  • 3 tbsp soy sauce
  • salt & pepper to taste
  • 100 gms chicken liver (mashed)
  • 1/4 cup grated cheese
  • 2 tbsp fish sauce(patis)
  • chillies optional
  • sky flakes(optional used to thickened sauce)
  • a bunch of SMILE!!!!

Procedures:

  • in a large sauce pan, place all ingredients except carrots & potatoes. bring to a boil using low heat for 45 minutes. (stiring every 5 minutes)
  • when beef is half tender, pour in potatoes & carrots, chillies & flakes is your option.
  • check if beef is ready, seasoned with salt & pepper then add cheese before serving
  • Enjoy & have a big appetite!!!
