GP’s LOMI Guisado


Hello guys…. I havent post for a while. Been busy for our small business. GP’s garlic chili oil. Its an all rounder condiment that will bring amazing flavour and spice to your meal. Just simply add it at the end of your dish. The garlic, combined with chillies and smoky paprika flavour will surely enhance your meal. Yuummmm. . . Back to the dish, its a pancit lomi guisado. Its one of truly filipino-asian inspired dish which is favourite on winter either snacks or dinner. You can find this dish in every corner small cafeteria in our country……I am so happy to share you once again this recipe………Did you know that egg noodle is a rich source of proteins. Your body uses protein to build and repair tissues. You also use protein to make enzymes, hormones, and other body chemicals. Protein is an important building block of bones, muscles, cartilage, skin, and blood.

ingredients: (serves 4-6 persons)

  • 2 tbsp oil
  • 3 cloves minced garlic
  • 1 medium minced onions
  • 4 pcs chicken drum sticks
  • 6-8 pcs shrimps
  • 100 gms chicken liver
  • 300 gms pancit lomi
  • 2 pcs eggs for beating
  • 4 pcs hard boiled eggs
  • 4-6 pcs squid ball
  • 1 tbsp soy sauce
  • 1 tsp of salt / pepper
  • 2 cups water or chicken broth
  • 1 medium carrots sliced
  • 2 bunch bok choy or 100 gms cabbage sliced
  • 1 stalk celery diced
  • 1 tbsp fish sauce
  • 1 stalk spring onions chopped

Procedures:

  • In a large sauce pan, heat oil and saute garlic and onions, add chicken and liver and simmer for about 5 minutes.
  • add in squid ball and seasoned with soy sauce, salt & pepper.
  • add the rest of the vegetables and ingredients and lomi then cook for another 5 minutes
  • add water and adjust your taste by adding fish sauce
  • Bring to a boil ..dont over cooked the vegetables.
  • Turn off heat and break in 2 pcs eggs and stir.
  • serve hot!!

GP chicken bbq / Inasal

Ingredients
4 chicken drumstick
4 chicken wings
Salt and pepper to taste
1 tbsp achuette powder
4 tbsp GP garlic vinegar marinade dip
2 tbsp brown sugar
2 tbsp olive oil
2 tbsp lemon juice
1 tbsp soy sauce

Procedures:
In a bowl, mix all ingredients and marinate chicken 12 hours or over night.
Grill in charcoal or pan grilled.
Serve hot with a GP marinade and dip sauce on the side.

Curry Fried Chicken


Curry……..I got this recipe from a magazine (forgot the title) while I am waiting for my daughters swimming lesson.  I am very intrigue because usually curry comes with a lots of sauces.  So when I got home, I am very eager to try it since I am planning for a chicken dish. It is really nice, the flavour is compact and  it is best with chips. So I have an instant curry chicken and chips……………..Did you know that curry powder is actually a mixture of many number of spices, one main spice in most curry powders is turmeric. This is the spice that gives curry it’s yellow color and is also responsible, at least in part, for some of the health benefits of curried dishes. They said turmeric is 8 times stronger than vitamin  C and helps boost our immunity, maintains good cholesterol level and lastly, put brakes your aging….

Ingredients: good for 3 to 4 persons

  • oil for frying
  • 6 pcs chicken thighs
  • salt & pepper
  • 1 tbsp mild curry powder
  • 1/4 cup coconut cream
  • 2 cloves garlic crushed

Procedures:

  • in a container, place chicken and rubbed with garlic, salt & pepper, curry powder and coconut cream. marinate for about 1 hour.
  • In a frying pan or deep fryer, fry chicken wings until golden brown.
  • serve with steamed rice and hot sauce
  • enjoy!!

Baked Peppered Chicken


Salt and peppered Chicken……………….This baked chicken is very good filling for your sandwiches such as turkish chicken sandwich or cajun chicken wrap as I used this as my base filling for any chicken sandwich I want to make. Sometimes I even used this on my fried rice or saute’d vegetables. Bake it and keep in fridge and it will last for 3 days. The taste is so flavourful as we keep the chicken taste intact because I only used onions, salt and pepper to taste…………….Did you know that salt is a good source of sodium. The sodium in salt is very critical in maintaining human hydration. Some studies have confirmed the importance of a balance of electrolytes: sodium, calcium, potassium and magnesium. For instance, after exercise it is necessary to replace not only the water lost through perspiration, but the important electrolyte, sodium, as well. Because of declining renal function in the aging body, the kidneys retain less sodium. Changes in the intestinal function sometimes also lead to reduced absorption of many nutrients. These changes expose the elderly to an increased risk of hyponatremia. It is essential that the elderly maintain a stable sodium level in the body.

Ingredients: can make up to 10-15 sandwiches of different kinds

  • 1.5 kilogram breast fillet
  • 2 tbsp ground pepper
  • 1 tbsp ground salt
  • 1 large onions sliced
Procedures:
  • In a roasting tray, spread salt and pepper to chicken evenly and cover with sliced onions. Rub well
  • Then Bake for 45 minutes at 170 degrees. cover with foil
  • When the timer is off, allow 10 minutes resting time. then cut to your desired thickness
  • Grab a toast and eat it….
  • Enjoy!!!

Fried Rice with Chicken Schnitzel


fried rice………..There are hundred ways to enjoy your fried rice. You can cook it with bacon, shrimp or sometimes you can cook it with your left over meals. This one, I cook it with our leftover omelette. I will tell you the little story, I have a Chef trainee. The order from the docket is an omellette with salmon and brie cheese. But he made a bacon and vegetable one. It was truly out of no where order. So instead of wasting the food, I decided to mix it with my rice and grab some chicken schnitzel. And It serves as my big big lunch for the day…How about you guys? What do you do with your leftover meals?……………..Did you know that 50 percent of fat found in bacon is monounsaturated fat? That is the good fat that can help you lower bad cholesterol. Bacon’s monounsaturated fat is “oleic acid”. The same “healthy” fat find in an olive oil.  Hard to believe it, but its true. One of the knockdown against bacon is its nitrate compounds that used to preserve the meat. However, this compound causing cancer are only found in overcooked bacon. But don’t worry, by drinking  juices with lots of vitamin C and E inhibit the conversions of nitrate in our stomachs. Can you resist a fried bacon on your breakfast?……….

Ingredients: Good for sharing

  • 2 cups rice
  • leftover omelette (made with bacon, onions and veggies)
  • 3 pcs Schnitzel (fried breaded chicken)
  • Oil for frying.

Procedures:

  • In a pan, heat a little oil and stir fry rice and omelette. stir well until rice and omelets are well mix. Set aside
  • Meanwhile, In a frying pan, heal oil and fry chicken schnitzel until golden brown
  • Serve hot.

KFC (Kids Fried Chicken)


This is my version of KFC(kids fried chicken)…………..I want to reveal the 11 secret herbs and spices since I worked in Kentucky Fried Chicken Restaurant for two years while I am studying. Yes, I did full-time job and full-time study at the same time. I go to school in the morning from 7am to 2pm and start to work at 3-12pm daily. I did that for 4 years. It’s a really busy life that I missed a lot of teens activities…..Oooooopppsss!! enough of my college life, let’s go back to the KFC’s secret recipe. Are you ready?….I can only name 4 because the remaining 7 ingredients was in a foil pack that doesn’t have a label. The 4 ingredients are flour, salt, pepper, milk and egg powder. Believen me minus the 7 recipe,  it taste almost like the KFC’s chicken. and for an added bonus, I will teach you how to make the gravy, KFC style………………Did you know that chicken drumsticks boasts a positive nutritional profile. It is high in protein, low in fat and cholesterol, and contains zero carbs, making it a winning choice for healthy eating. but a little warning for you guy, deep frying may absorbed lots of oil and fat. Excessive eating of fried dishes may lead you to obesity. ……

Ingredients: serves 3-4 persons

  • 10 pieces chicken drumsticks
  • 1 cup flour
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 1/4 cup milk powder
  • oil for frying
Procedures:
  • In a container with cover, combine all ingredient together except chicken, mix well.
  • Then Dip chicken in the flour mixture and cover. shake well allowing the chicken to absorb the flour mixture.
  • In a deep frying pan, heat oil and fry chicken. If you want to get the tenderness of the chicken. cover the frying pan. If you want it to be crispy, don’t cover it.
  • fry for 12 minutes or until golden brown.
  • Drain deep fryer oil and save dripping or crackling.(the cooked flour)
Gravy:
  • drippings or crackling(cooked flour)
  • 2 cups water
  • 1/2 cup flour dissolve in 1/2 cup water
  • salt & pepper to taste
  • 1 tbsp seasoning soy sauce(optional)
* in a pan, boil 1 cup of water and add cracklings. boil and stir in dissolved flour. adjust your taste by adding salt and pepper. if you want your gravy a little darker, you can add seasoning soy sauce. Depending on your desired texture, add the remaining 1 cup of water little by little.

Chicken Ala Pobre


Chicken Ala Pobre…..I’ts another grilled recipe made with lots of garlic. I already posted the pork steak ala pobre. and some grilled chicken recipe such as peri peri chicken, bacolod chicken inasal, honey barbeque chicken and many more. Usually served in a sizzling plate where you can find in SM supermalls food court back home. Gosh, I missed that place, its my wife favorite food especially the t-bone steak in sizzling plate served with lots of gravy. So, how about you? What’s your favorite food served in a sizzling plate? ………… Did you know that garlic is a plant with a very strong and bitter flavor which has been used for both culinary and medical purposes for hundreds of years. The key medicinal ingredient in garlic is allicin, which is known to have wonderful anti-bacterial, anti-viral, anti-fungal and anti-oxidant properties. Garlic’s antibacterial properties make it a wonderful treatment for coughs and other throat irritations. Garlic may also reduce the severity of upper respiratory tract infections. Garlic is also considered to regulate blood sugar levels by increasing the release of insulin in diabetics…….You  may noticed that I always use garlic on almost every recipe I made…..

Ingredients: good for 3-4 persons

  • 500 gms chicken fillet)skin on)
  • 1/4 cup soy sauce
  • 2 tbsp lea perins
  • 2 tbsp lemon
  • 8 cloves chopped garlic
  • 1/2 tsp marjoram
  • 1/2 tsp thyme
  • 1/2 tsp ground pepper
  • salt to taste
Procedures:
  • In a mixing bowl, combine all ingredients together and rub chicken evenly. marinate for a minimum of 15 minutes.
  • In a charcoal grill or oven, grill chicken to your desired doneness. take note that chicken should be cook well done.
  • Enjoy!! you can served in a sizzling plate for better and long-lasting heat.

Caribbean Chicken


I remember this recipe was made by accident back in PHI when I was working in banquet and catering dept. The story is, we had an over crowded event that supposed to be a hundred persons and suddenly went to a 150 persons.  Lucky, in banquet kitchen, we already have some fried meats such as chicken, pork and fish so meaning we only need to make the sauce for every dish. Since the menu theme is continental buffet, it is very safe for us to create a dish. We called it as the Caribbean Chicken in white creamy sauce………………..Did you know that cajun seasoning is a mix of spices such as chili, cayenne pepper, onion and garlic powder, black and white pepper. Cayenne pepper gives the distinctive red coloration to a Cajun spice mixture. Additionally, cayenne pepper is the source of the heat that is common to Cajun seasoning. Cayenne nourish the heart with vital nutrients, remove plaque from the arteries, help rebuild flesh destroyed or harmed by frostbite, heal hemorrhoids, re-build stomach tissue, heal stomach ulcers, fortify your overall health, and mitigate the most wrenching of diseases……….As I always say to my post, the more spicy, the more healthy………

Ingredients: good for 3-4 persons

  • 8 pcs chicken drumsticks (cut in half or you can serve it whole drumsticks)
  • 1 cup mixed vegetables(corn, carrots, peas)
  • 1 tbsp chopped ginger
  • 1 small white onions chopped
  • 3 cloves garlic
  • salt & pepper to taste
  • 2 tbsp oil
  • 1/2 tsp cajun seasoning
  • 1 stalk coriander
  • 1/2 cup fresh milk
  • 1/4 cup sultanas
  • 1/4 cup diced capsicum

procedures:

  • In a pan, heat oil and saute garlic, onion and ginger. saute well then add in chicken and let it brown(saute approx 5-8 minutes). then season with cajun seasoning.
  • then add in mixed vegetables, sultanas and capsicum. simmer for another 2 minutes. adjust taste by adding salt & pepper
  • Add in coriander and milk then remove from heat. don’t boil milk.
  • Serve hot!!!

Spicy Chicken in Soy Bean and Vegetables


Spicy……..I really enjoy eating spicy food specially this dish. It’s a spicy chicken using a soy bean paste and chillies mixed with some vegetables served on garlic fried rice. I considered this food picture as one of my best photo shot ever. I am not a good photographer but every time I read other’s blog post and food magazines, I see some techniques nad styles which I adopt to my blog. I am really challenged to take a good photo for my food. I hope someday I could be that great photographer…………Did you know that soy bean have a cholesterol-lowering effects with a health claim stating that little consumption of soy protein per day may reduce the risk of heart disease. Recent research suggests that soy may also lower risk of prostate, colon and breast cancers as well as osteoporosis and other bone health problems, and alleviate hot flashes associated with menopause………..

Ingredients: good for 3-4 persons

  • 250 grams chicken breast cut in strips
  • 1 tbsp oil
  • 2 cloves garlic
  • 1 tbsp chopped ginger
  • 1 small chopped onions
  • 1/2 cup baby corn
  • 1/4 cup sliced capsicum(red and green)
  • 1/4 cup sliced carrots
  • 1 tbsp soy bean chilli paste
  • 1 tbsp oyster sauce
  • 1 tsp cornstarch dissolve in 3/4 cup water
  • salt & pepper to taste
  • dash of sesame oil

Procedures:

  • In a wok, heat oil and saute garlic, onion and ginger. Add in chicken and saute until lightly brown
  • Add in all vegetables and seasoned with oyster sauce and soy chilli paste. adjust taste by adding salt and pepper
  • Add in water and cornstarch mix and boil for a minute. drop a little sesame oil upon serving.
  • Serve with garlic rice.

Honey Barbeque Chicken Wings


This barbeque dish is one of my favorite marinade among my chicken dishes. Its an Asian-filipino style barbeque recipe made with honey, banana ketsup, soy sauce and little sugar. Yes, It is sounds sweet. Because most Filipino taste buds from barbeque is on the sweet side. You can add chillies if you want it to be spicy, I love the blending of sweet and spicy chicken. Again for your references, I already posted some of the best grilled or barbequed chicken such as chicken inasal, peri-peri chicken, chili herb roasted chicken and many more………..Did you know that honey supplies the organism with substances for the formation of enzymes and other biological ferments to promote oxidation. Also, honey’s soothing qualities may help relieve sore throats and nighttime coughs in children. When my family suffers from common cough and cold, we always drink a cup of hot honey and lemon. try it, its good for our lungs.

Ingredients:

  • 12 pcs chicken wings
  • 1/2 cup honey
  • 1/4 cup white sugar
  • 1/2 cup banana ketsup
  • 2 tbsp seasoning soy sauce
  • 1/2 tsp white pepper
  • Chillies are optional

Procedures:

  • In a container with lid, Combine all ingredients together and rub chicken evenly. marinade for a minimum of 1 hours.
  • In a charcoal grill. grill chicken until cooked.
  • Best served with achara.
  • Enjoy!!!

Chicken Afritada


Chicken Afritada..It’s a casserole made of tomato sauce combined with vegetables……If you will cook this using PORK- it will be menudo, If BEEF -it’s  Beef Kaldereta , If seafood – maybe callos…If I forgot to mention some, please do help me?, In some countries, they might have different ways to cook their casserole using tomato sauce. So, please tell me, how do you cook your casserole?………Did you know that tomatoes offer enormous health benefits for you, especially “cooked” tomatoes. Tomatoes are in the fruit family and have tons of vitamins and minerals in them that your body needs. Tomatoes are rich in lycopene. Some studies revealed lycopene and eating tomatoes could protect against many types of cancer, with the higher protection going to prostrate, lung, and stomach cancer.

Ingredients: serves 4-6 persons

  • 1 kilo chicken cut in serving portions
  • 2 tbsp oil
  • 4 cloves minced garlic
  • 1 medium white onion
  • 1/2 cup tomato sauce
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 3 pcs bay leaves
  • 1 large potato big dice
  • 1 large carrots big dice
  • 1 tbsp cornstarch dissolve in 1 cup water
  • 1 pc bell pepper dice
  • 1 pc chicken sausage (optional) 

Procedures:

  • Ina large saucepan, heat oil and saute garlic and onions then add in chicken and saute and brown for 10 minutes allowing all the chicken flavor to come out. season with salt and pepper.
  • Add in potato, carrots, tomato sauce and soy sauce then simmer for 5 minutes.
  • Add in chicken sausage, bay leaves and bell pepper and boil for 5 minutes.
  • Then pour in cornstarch mix and simmer for 2 minutes and remove from heat
  • Serve hot!!!

Chicken Teriyaki with Yasai Itame


Whew!!! Time is really running very quick! This is my 100th recipe posted in this blog. . . . Let’s have a simple Japanese food! Chicken Teriyaki…There are many ways to cook chicken teriyaki, you can grill, fry, cook in griddle and even pan-fried. What really matter most is your teriyaki sauce. My version is flour coated and fried…Usually this cooking style is used in restaurant because you can make your meat looks bigger…Customers sometimes looks for the serving size and their value for money…Did you know that stir-fry vegetables I used in this recipe such as beansprout are a great source of  all types of vitamins (A, B, C, D, E and K), folic acid and are an excellent source of iron, potassium, calcium, phosphorous, magnesium and zinc…

Chicken bread mix

  • 100 gms chicken meat (tenderize and spread to approx 4 x 3 inches wide)
  • flour for breading
  • 1 pc egg
  • salt & pepper
  • oil for frying

* coat chicken meat with flour then dip to egg then dip to flour again, fry until golden brown.

Teriyaki sauce

  • 1/2 cup soy sauce(kikoman)
  • 3 cups water
  • 100 gms of grilled chicken bones (to get that smokey flavor)
  • 1/2 cup cornstarch dissolve in 1 cup water
  • salt & pepper
  • 1 medium onions
  • 1 cup sugar
  • 2 tbsp hondashe (japanese MSG)
  • 1 stalk of celery
  • carrots & potato peel (optional) 

Procedures:

  • in a separate pan, heat oil and pan grilled chicken bones until darkly cooked. (to get that smokey flavor)
  • In a large sauce pan, place all ingredients except cornstarch, sugar and kikoman.. boil for 30 minutes. set aside and strain.
  • pour over sugar and kikoman..let it boil and add in cornstarch.. adjust your desired thickness by adding little water. stir well

Yasai Itame: (serves 3-4 persons)

  • 2 tbsp cooking oil
  • 1 medium onions
  • 1 small bell pepper
  • 100 gms beansprout
  • 50 gms carrots Julienne.
  • 2 tbsp kiko man
  • salt & pepper to taste

Procedures:

  • In a wok, heat oil and saute all ingredients together for about 2-3 minutes. serve with chicken teriyaki.   sprinkle with sesame seeds
  • Enjoy!!!!!!!!!!

Tinolang Manok (Hot Chicken Ginger Soup)


Tinola…It’s a hot soup made of chicken using lots of ginger and some veggies…The best tinola I tasted was the one cooked by my fellow guardian and friend as well(jepoy). He taught me how to cook this recipe even we don’t have enough ingredients. The secret is on how you saute’ the chicken, You need to give more color, so you can have more flavor to the chicken. Imagine, we just share 1/2 kilo of chicken for 6-8 persons. He cooks well despite of limited resources. and that’s what I learned from him…..Did you know that sayote(choko or chayote) has no cholesterol or fat. Some research says eating soup made of chayote and its leaves is good for lowering high blood pressure & dissolving kidney stones….

Ingredients: (good for 5-6 persons)

  • 2 tbsp oil
  • 3 cloves garlic
  • 1 medium onions
  • 2 tbsp of ginger slices
  • 1 kilo chicken( cut in portion size)
  • salt & pepper
  • 3 tbsp fish sauce
  • 1 liter of water
  • 2 pcs medium chayote (cut in portion size)
  • malungay leave or bok choy(optional)

Procedures:

  • In a large sauce pan, heat oil and saute garlic and onion and ginger. add in chicken and saute well until golden brown then seasoned with salt & pepper
  • add a liter of water and bring to boil. add chayote and malunggay leaves or bok choy. adjust your taste by adding fish sauce
  • Serve hot!!
  • enjoy!

Cajun Chicken Wrap


Chicken wrap…a healthy mix of veggies combined with baked chicken. You can also use wide variety of meat like roast lamb, roast beef, seafood like fried calamares, fried fish and more…The first time I tasted this in NZ, It reminds me of philippines shawarma, they said the best shawara was in our place, Quezon City-tandang sora……Did you know that serving a baked chicken in your diet, you take a lot of percentage of the niacin, or vitamin B-3, you need each day. The niacin in baked chicken helps to improve your body’s circulation and ability to make a variety of hormones. You also take in some percentage of the daily recommended amount of selenium, which plays a critical role in fertility and protects your immune function

Ingredients: serves 4-6 wraps

    • 750 gms baked chicken breast(baked in 180 degrees for 30 minutes rubbed with salt & pepper)
    • 6 pcs tortilla wraps
    • 1 small carrots grated
    • 1 bunch of coriander
    • 200 gms mesclun salad greens
    • 2 pcs tomatoes sliced
    • 1 small cucumber
    • 1 medium white onions sliced
    • 1 cup mayonnaise
    • 6 tsp cajun powder (1 tsp each wrap)
    • 6 tbsp sweet chilli sauce (1 tsp for each wrap)
    • 6 tbsp hot sauce (1 tsp for each wrap)

    Procedures:

  • Using your imagination, wrap the following ingredients. cover with foil and toast for about 5 minutes.

Enjoy with a glass of juice…great for your lunch box too…….

Peri Peri Chicken


How spicy can you go?? .. . . Peri peri chicken, one of our favorite!!! It is a  hot and spicy chicken recipe, Peri Peri chicken is a speciality of the Nando’s restaurants. It’s a home made Peri Peri sauce that use several kinds chillies, chile powder and other ingredients. I think almost every week we go to nandos restaurant to eat this meal(Hey, nandos, you need to pay me for advertising your restaurant free!! hehehe)……..Did you know that the more chillies you eat, the more healthier you go…Because chillies are also good in other antioxidants like vitamin A, and flavonoids like beta carotene, alpha carotene, lutein, zeaxanthin, and cryptoxanthins. These antioxidant substances in capsicum helps to protect body from injurious effects of free radicals generated during stress, diseases conditions.

Ingredients: good for 3-4 persons

  • 12 pcs chicken nibbles or wings
  • 1/2 cup butter, melted
  • 1/4 cup Peri-Peri Sauce (see recipe below)
  • 2 Tbsp fresh lemon juice
  • 4 cloves garlic, crushed
  • 1 tbsp paprika

Procedures:

  • In a container add butter, Peri Peri sauce, lemon juice, garlic and paprika. mix well then add chicken and rub evenly.
  • Marinade for at least 2 hours in the refrigerator.
  • You can use charcoal grill or grill in the oven. Brush with the remaining sauce every 5 minutes
  • Enjoy!!!
  • Best with a chips or java rice 

Peri Peri sauce recipe

Ingredients:

  • 8 fresh hot chilli peppers (jalapeno), chopped
  • 1 medium capsicum chopped
  • 8 Tbsp lemon juice or lime juice
  • 1/2 cup tomato sauce
  • 1 cup olive oil (or more to achieve desired consistency)
  • 1 Tbsp cayenne pepper or red pepper (adjust quantity to taste)
  • 3 tsp garlic powder
  • 2 Tbsp paprika
  • 2 tsp salt
  • 1 tsp ground pepper
  • 2 Tbsp dried oregano
  • 1 tbsp chilli powder

Procedures:

  • Combine all ingredients in a food processor or blender and adjust your taste with salt, pepper, cayenne pepper and paprika.
  • Refrigerate for at least 2 hours or overnight
