Ben Ten Chocolate Cupcakes
Cupcakes……….This is a Ben Ten Cupcakes we give as a birthday gift to my daughter’s classmate GAB who celebrated his 7th birthday few month ago. The cupcakes were super awesome. It was design by my wife. My very own Pastry Chef! It is a super moist chocolate cupcake served with a chocolate cream cheese frosting! YUMMM!! Sinfully chocolatey!!!
Chocolate and Cream cheese frosting:
- 200 grams cream cheese
- 50 grams butter melted
- 2 tbsp cocoa powder
- 300 grams icing sugar
* Combine all ingredients together and mix using an electric mixer. mix until soft peak.
White Icing (ready-made) and some food color for topping
Ingredients: makes 20-25 pcs cup cake
- 250 gms butter
- 250 gms dark chocolate for melting
- 3/4 cup caster sugar
- 1/2 cup self raising flour
- 1/2 cup bakers flour
- 1/2 cup cocoa powder
- 1/2 cup cream
- 3 pcs eggs
- 1/2 cup chocolate bits for filling
- 1/2 cup walnuts
Procedures:
- in a large plastic mixing bowl, combine dark chocolate and butter, microwave for 30 seconds then stir and back again for 30 seconds and stir. do this procedures until chocolate are melt. we don’t want to burn the chocolate.
- add in eggs and beat. then add the rest of the ingredients. continue beating, this is a wet mixture.
- In a muffin tray, spread sheets of muffin paper, and pour in chocolate mixtures half way.
- Pre-heat oven at 170 celsius and bake for 8-12 minutes.
- cool down and garnish with white icing. Design may vary depending on your occasion.
Kid’s Birthday Cupcakes
Cupcakes…………..I will share you a recipe we made during our daughter’s birthday party. Since our motif was Hawaiian theme, we made a “jandals design cupcake”. It is a very easy and supermoist chocolate cupcake. The toppings were made and design by my wife. She’s my very own Pastry Chef! For orders you may call her direct!! (Hahahaha LOL). Ok, Back to the recipe, We find ‘theme cupcakes” very expensive here in NZ as it will cost you about 3-4 dollars each cupcake, so thats why we decided to make our own as this will cost you like 10-15 dollars of more that 25 pcs cupcakes. (You can do the Maths) Very good profit!!! So, what are you waiting for, let’s do it and start selling cupcakes on kid’s birthdays!!!!……………..

Chocolate Loaf
To be honest, this recipe is like bread with a chocolate spread but using white and dark chocolate that makes it a little bit exciting to eat. Best paired with a cup of coffee or tea during breakfast or simply have it as a dessert after meal or best lunch box to school or to your office. You can chilled it in fridge and get a slice and warm in a microwave for 30 seconds. It’s an instant snack as well………….Did you know that dark chocolates is an anti-oxidant powerhouse. Dark chocolate and cocoa are rich in cell-protecting antioxidants — natural compounds found in fruits, vegetables, grains and nuts.
Ingredients: serves on 2 cake loaf tin
- 2 cups bakers raising flour
- 2 tsp baking powder
- 1/2 cup caster sugar
- 1/2 cup desiccated coconut
- 1 cup melted butter
- 1 cup milk
- 1 cup dark chocolate bits
- 1/2 cup white chocolate mini chips
- 1 tsp vanilla extract
- 3 pcs fresh eggs
Procedures:
- In a large mixing bowl, mix sugar and butter well for about 5 minutes then add egg one at a time.
- Add in all ingredients except dark and white chocolate. mix well.
- then fold in dark and white chocolate.
- pre-heat oven at 160 degrees and bake for 30 minutes.
- cool down for an hour before serving.
- Serve with coffee or tea.
Chocolate Almond Fudge
Chocolate Lovers?……It’s a mouth-watering combination of almonds and dark and white chocolates. This recipe is good for cocktails, pica pica and snacks. or even perfect pair for your favorite cup of coffee or tea. Again, turns out to be my daughters favorite, but she just eat the toppings. I also give this as my birthday gift to my friend RAM and to GRANNY Ing(tita kwens mom)……Did you know that almonds helps you getting relief from constipation, anemia, impotency and diabetes? Because almonds is a very nutritious nuts loaded with vitamins and minerals such as vitamin E, calcium, magnesium, zinc, iron and many more…..
Ingredients: makes 30 mini slices
- 250 gms butter
- 400 gms 70 % dark chocolate
- 3 pcs fresh eggs
- 1 tsp salt
- 1 cup flour
- 1 cup self raising flour
- 1 cup white sugar
- 1 tbsp vanilla essence
- 1 cup sliced almond nuts
Frosting: chocolate ganache
- 150 gms heavy cream
- 350 gms semi sweet chocolate
White chocolate frosting:
- 1/2 cup white chocolate
- 1 tbsp canola oil
Procedures:
- Melt dark chocolate and butter in a mixing bowl over hot water. let it warm and add in egg one by one. continue stirring then transfer in a large mixing bowl.
- Pour in sifted flour, self raising, salt and sugar. add in vanilla essence and fold with almond nuts.
- IN a rectangular pan or baking tin, spray oil and pour cake mixtures.
- Pre-heat oven at 160 degrees celsius and bake for 12-15 minutes. using a tooth pick, check the cake moisture, do not over cook, we are looking for a moist fudge cake. let it cool
- For toppings – melt chocolate and heavy cream in a bowl over boiling water. then pour into cake. melt white chocolate and oil and using a folded baking paper, using your imagination, pour in white chocolate for presentation.
Chocolate Mousse
Chocolate lovers?….You need to try this, It’s a classic chocolate mousse made by me and my wife. I prepared the mousse and she finished the toppings. I was very eager to make this because it’s been a long time since I had one, the last time was maybe 4 years ago. So here it is, I am happy to share to you guys my favorite chocolate recipe……..Did you know that chocolate mousse main ingredients are heavy cream, and this cream is excellent sources of protein & calcium. This is a very helpful nutrients. For instance, Calcium is a good aid in maintaining bone health, dental care, prevention of colon cancer, reduces obesity, etc. While protein helps our body to build and repair tissues…..
Ingredients: makes 12-15 container approx 10 oz
- 2 1/2 cups heavy cream – whipped
- 1 1/4 cup 70 % dark chocolate bits
- 3/4 cup butter unsalted
- 3 pcs fresh eggs (white and yolk separate)
- 1 tsp cream of tartar
- 1 tsp vanilla essence
- 1/2 cup icing sugar
- 1 cup caster sugar
- 12-15 container with lid approx 10 ounces
- 1/2 cup chocolate bits sweetened for topping
procedures:
- In a large mixing bowl, using electric mixer, whipped the cream until fluffy, then add 1/2 cup of caster sugar and vanilla essence. set aside. divide in 2 sets (we will call this “Mix A & B”)
- In a microwavable bowl, pour in butter and dark chocolate then heat in microwave for 1 minute. then stir, add in egg yolk one by one and stir until it become smooth. then add 1/2 the remaining 1/2 cup caster sugar, stir well. we will call this as “Mix C”.
- In another mixing bowl, whip egg white until smooth fluffy then add cream of tartar. continue whipping until smooth and fluffy. then add in icing sugar and whip. set aside. Divide in 2 sets(we will call this “D & E”)
- In a large mixing bowl, pour in “Mix A, C and D”. fold gently, then pour a portion approx 4 oz in the 12 to 15 containers.
- Fold gently “Mix B and E” then top it to the “containers”
- Top the containers with chocolate bits and chilled for a minimum of 4 hour or overnight.
- Enjoy!!!
Chocolate Cheesecake
Do you like cheesecake? and a chocolate cake as well?, ..Definitely, you will need to try this, It’s a creamy blend of chocolate and cream cheese…I am really having a hard time taking good photos when it comes to cakes and dessert, When I took photos for my double chocolate cake, It took me 50 shots, this cheesecake took me less, maybe about 30 shots……..Did you know that cream cheese is made using milk products, it provides some percentage of your recommended calcium intake. It is important to find other ways to incorporate calcium in your diet to maintain strong bones. Cream cheese also contains a wide variety of nutrients including carbohydrates, fats and proteins and, when used in moderation, can be included daily as part of a healthy diet……
Ingredients: makes one 6″ or 8″ inch round tin
- 1 1/2 heavy cream
- 2 cups cream cheese
- 1 cup white sugar
- 1 tbsp lemon juice
- 2 tbsp gelatin powder dissolved in 1/4 cup hot water
- 1/4 cup cocoa powder
- 2 tbsp chocolate bits
Procedures:
- In a separate mixing bowl, whip the cream until fluffy, set aside. divide the cream into half portions.
- In another mixing bowl, whip sugar and cream cheese then add lemon juice and gelatin mixtures, divide the mixture in half, whip the other half with cocoa powder then add fold in “other half whipped cream”
- fold the other half of cream cheese mixture into the remaining whipped cream mixtures.
- Spray tin with oil and place baking paper. Assemble the mixtures by placing the whipped cream & cream cheese mixtures then the other chocolate and ccream cheese mixtures.
- Topped with chocolate bits and place inside freezer for a minimum of 2 hours.
- Enjoy with a cup of tea or coffee.
Double Chocolate Cake
To be honest, It took me 50 shots to take this photo..sorry I am not really a good photographer. I wish I could be someday…While taking photos, we start eating the cake then I realized I havent take a full photo shot of the cake…huhuhuhu!!!..A very sinful chocolate cake!!!….Did you know that chocolates are high in potassium and magnesium, chocolate also provides us with several vitamins – including B1, B2, D, and E. As for calories, no one is going to claim chocolate is the quintessential diet food. But still, it is low enough for a dieter to enjoy one as an occasional treat. Besides, indulging your chocolate craving from time to time can help prevent the bingeing that is a dieter’s worst enemy….
Ingredients: Makes one round sinfully delicious chocolate cake
- 150 gma butter
- 1 cup white caster sugar
- 3 eggs
- 1 cup self raising flour
- 1/2 cup bakers flour
- 1/2 teaspoon baking soda
- 1/2 cup cocoa powder
- 100 gms 70% dark chocolate melted
- 3/4 cup fresh cream
Topping: Chocolate ganache
- 400 dark chocolate melts
- 1 cup fresh cream
- Rainbow choco sprinkles (optional)
Procedures:
- Preheat the oven to 160 degrees Celsius. Grease a deep 20 or 22 cm round cake tin and line the base with baking paper
- Beat butter and sugar in a mixing bowl with until light and fluffy. Beat in eggs one at a time.This will help create a smooth texture.
- add the following ingredients by sifting flours, bicarbonate of soda, and cocoa, then stir in the melted chocolate and milk
- Spread in cake tin and bake for approximately 1 hour or until firm to touch.
- Leave in cake tin for 30 minutes, then turn onto wire rack to cool. cut half way(for chocolate ganache filling inside)
- To make the topping, place chocolate and cream in a container and microwave for 2 minutes, stir over heat until chocolate is melted. Pour over on half of cake , assemble other half and pour the remaining ganache on top of cake.
- Using your imagination, decorate your cake with rainbow sprinkles or some chocolate shavings.
- Best with a cup of coffee or tea.
