Chopped Salad


Salad……..Another simple salad selection that is so healthy and a great starter to your “mains” or a quick salad to your buffet. I remember every time  we run out of an idea what to place in salad section, the easiest way is to cut in dice every vegetable you got in your pantry. If you have onions, tomatoes and cucumber plus some green salad and some feta cheese, well you will have a simple chopped salad. you can also add if you have some left over ham, smoked chicken or beef to this salad. hmmmmmm….Yummmmmm!!!!!

Ingredients:

  • 3 pcs tomatoes in dice
  • 1 pc white onions in dice
  • 1 pc cucumber in dice
  • some green salad such as mesculin, cos lettuce or any lettuce, chopped
  • feta cheese in cubes
  • 3 capsicum, green, yellow and red, diced

Simple vinaigrette Dressing:

  • 1/2 cup olive oil
  • 1/2 cup white wine vinegar
  • salt and pepper
  • 2 tbsp minced green capsicum
  • 2 tbsp  minced onions
  • 1 clove minced garlic

pour in a container jar and Shake well

Procedures:

  • Combine all vegetables in a salad bowl
  • Tossed with vinaigrette
  • Serve and smile!!!!

Cucumber Salad


….A very quick and easy salad appetizer. There will be no cooking involve on this recipe as it is just composed of sliced cucumber, vinegar, little olive oil and sugar, salt and pepper and chillies if you prefer. Who will say no to a fresh and crisp skin of a cucumber? This is a simple starter I paired with my grilled pork chops. Back home, we used to have this as a appetizer especially when we are having a hard drinks such as gin, vodka, whisky and etc. Yes, I am a heavy drinker (that was 10 years ago)………………………….Did you know that cucumber is from Cucurbitaceous family like zucchini, melon, squash and pumpkin. Like watermelon, these mostly contain water and are low in calories. These contain a lot of nutrients. Its flesh is crunchy and dense but also contains a lot of water. Cucumber is a very good source of dietary fiber. Cucumber skin contains silica that helps in forming healthier connective tissue for the skin giving the person a healthier skin, cartilage, bone, tendons, ligaments and muscles. Cucumber is very useful for skin problems, sunburns and also for curing swelling under the eyes. Beauticians have been using cucumber generously and advice placing cucumber slices on the eyes. It contains caffeic acid which assists in preventing water retention. Placing two cucumber slices on eyes for ten minutes can reduce the puffiness considerably…………….

Ingredients: serves 2-3 persons

  • 1 large cucumber (sliced)
  • 1 tbsp olive oil
  • 1 tbsp white sugar
  • pinch of salt and pepper
  • 1/2 cup white vinegar
  • chopped chillies optional

Procedures:

  • In a small mixing bowl, combine all ingredients except cucumber. mix well then pour over cucumber slices
  • In a serving plate, transfer cucumber salad and topped with chopped chillies.
  • serve cold.
