Tuyosilog (dried fish, egg and fried rice)
tuyo(dried fish)………….It’s a common breakfast dish for Filipinos. It is best accompanied by a saute’d tomatoes, onions and eggs and off course the fried rice. While the dried fish is best dipped into a vinegar sauce with chillies. Believe me, after eating a lot of good food this holiday seasons, you will miss to eat this simple kind of meal. This is the last member of the “SILOG” family. to have a recap, I already posted chiksilog (chicken), Tocilog (pork) and more. I just bought the fish that I used here, because the last time I am trying to make a dried fish, the birds ate it all. It is usually cured by putting a lot of salt and let it dry under the sun for about 2-3 days. ……………..Did you know that dried fish is a completely natural product that retains the antioxidant and omega-3 benefits of fresh fish, while constituting a healthy and widely available food for both people and dogs. Fish helps to mitigate the occurrence of heart attacks and keeps the body’s circulation functioning well. Dried fish also provides an excellent source of protein with fewer calories than other foods such as beef. Most dried fish contains little salt or cholesterol while being high in essential vitamins and minerals. It also is low in saturated fat, which is known to aggravate or cause heart and blood-pressure problems……..
Ingredients: good for sharing
- 4 pcs of dried fish
- oil for frying
- 2 pcs eggs
- 1 whole tomatoes quartered
- 1 small onions sliced
- salt & pepper to taste
- 2 cups of fried rice
Procedures:
- In a pan, fry the fish in a little amount of oil. fry on your desired doneness.
- In another small pan, heat a littles oi land saute onions and tomatoes then seasoned with salt and pepper/ Stir in eggs and cook for a minute.

Fried Rice with Chicken Schnitzel
fried rice………..There are hundred ways to enjoy your fried rice. You can cook it with bacon, shrimp or sometimes you can cook it with your left over meals. This one, I cook it with our leftover omelette. I will tell you the little story, I have a Chef trainee. The order from the docket is an omellette with salmon and brie cheese. But he made a bacon and vegetable one. It was truly out of no where order. So instead of wasting the food, I decided to mix it with my rice and grab some chicken schnitzel. And It serves as my big big lunch for the day…How about you guys? What do you do with your leftover meals?……………..Did you know that 50 percent of fat found in bacon is monounsaturated fat? That is the good fat that can help you lower bad cholesterol. Bacon’s monounsaturated fat is “oleic acid”. The same “healthy” fat find in an olive oil. Hard to believe it, but its true. One of the knockdown against bacon is its nitrate compounds that used to preserve the meat. However, this compound causing cancer are only found in overcooked bacon. But don’t worry, by drinking juices with lots of vitamin C and E inhibit the conversions of nitrate in our stomachs. Can you resist a fried bacon on your breakfast?……….
Ingredients: Good for sharing
- 2 cups rice
- leftover omelette (made with bacon, onions and veggies)
- 3 pcs Schnitzel (fried breaded chicken)
- Oil for frying.
Procedures:
- In a pan, heat a little oil and stir fry rice and omelette. stir well until rice and omelets are well mix. Set aside
- Meanwhile, In a frying pan, heal oil and fry chicken schnitzel until golden brown
- Serve hot.
- Enjoy!
Pork and Sausage Jambalaya
Jambalaya……….Traditionally, jambalaya is made in tree parts, first is meat, second is its vegetables and third is the rice and the stock. It is very similar to paella as it is also composed of meat stocks such as chicken, beef or seafood, or even pork if you prefer. This dish is very common in buffet eat all you can, because you can be half full by eating this alone. But not all kinds of rice grains can be cooked this way, I suggest you to have a basmati or just a long grain rice will do. I normally use long grain rice, which produces a fluffier rice. If you are following a recipe that calls for long grain rice, and need to use medium or short grain rice instead, remember that rice grains have different absorption rates and adjust the amount of water accordingly. (In this case you would reduce the amount of water by 1/4 to 1/2 cup per cup of rice)………….Did you know that rice provides fast energy and is also readily digested. It is good for bowel health, is an important source of vitamin B1 and encourages stable blood sugar levels. We Filipinos, usually always have a rice on our diet…………..
Ingredients: serves 4-6 persons
- 2 tbsp olive oil
- 3 cups long grain rice
- 3 cups chicken stocks
- 3 cloves garlic
- 1 medium chopped onions
- 2 pcs sausages sliced
- 200 grams pork meat cut in small cubes
- 1/2 cup red and green bell pepper
- 1 cup mixed vegetables(corn,carrots and peas)
- 1 pc fresh tomatoes quartered
- 2 tbsp soy sauce
- 1/2 cup tomato sauce
- salt and pepper to taste
- 1/4 cup chopped celery
Procedures:
- In a pan, heat oil and saute pork until brown, allowing the flavour to come out. then saute garlic and onion on the same pan. add in sausages and the rest of the ingredients. this will serve as our jambalaya mixture.
- To make it easier, in a rice cooker, pour in chicken stocks and rice and stir in jambalaya mixture. stir well and cook the normal way as you cook your steamed rice..
- Serve hot!
Cajun Shrimp Fried Rice
Fried rice….one of the best dish to create your leftover meals to a new sumptuous dish. There are many variation of fried rice, actually it depends on your taste buds, you can put anything you want. I was raced by my mom of eating fried rice everyday, as she thought me to have a heavy breakfast daily……………..Did you know that Cajun seasoning considered the most healthy spices of all. Because it is mainly made with chili and cayenne pepper plus the mix of spices such as salt, pepper, paprika, onion and garlic powder. Cayenne Pepper is a herb made from the dried pods of chili peppers. Besides being a very popular spice in cooking, cayenne has also been used medicinally for thousands of years. High in Vitamins A, C, B complex, calcium and potassium, cayenne is a wonderful healing aid for the digestive system since it acts as a catalyst and increases the effectiveness of other foods and herbs when used with them………
Ingredients: serves 3-4 persons
- 2 tbsp oil
- 12 pcs medium shrimps (leftover from Nilasing na hipon dish)
- 3 cloves of minced garlic
- 1/4 cup chopped leeks
- 1 tbsp rice wine
- 1 medium white onions sliced
- 1 tsp cajun powder
- 4 cups cooked rice(long grain)
- 2 pcs eggs
- 1 cup bean sprout optional
- salt & pepper
- In a wok, heat oil and saute garlic, onions and leeks then add in shrimps, rice wine and seasoned with cajun powder and salt & pepper. simmer for 2 minutes
- Add in beaten eggs and cooked rice. continue stirring until eggs are cooked.
- Enjoy!!!
Egg & Vegetable Fried Rice
Egg & vegetable fried rice……. usually when it’s my day-off or weekends, I cook this for my family on our breakfast. Because that’s the only time we can eat decent breakfast together. The kind of rice we used is “long grain” . We paired this fried rice with hotdogs, fried fish or even just by itself…..Did you know that rice provides fast and instant energy, good bowel movement, stabilizing blood sugar levels and providing essential source of vitamin B1 to human body. Other benefits include skin care, resistance to high blood pressure, dysentery and heart diseases….
Ingredients: good for sharing
- 1 tbsp oil
- 1 clove garlic
- 1/2 medium onions
- 50 gms mixed veggies
- 2 pcs egg (beaten)
- 2 tbsp rice wine
- 1 tbsp chinese light soy sauce
- 2 cups cooked rice or all your left over rice
- salt & pepper to taste
Procedures:
in a wok, heat oil and saute garlic & onion, add in veggies, rice wine & soy sauce. then pour in egg beaten and cooked rice. seasoned with salt & pepper…serve hot..
Great with fried dishes…
TOSILOG (Cured Pork Meat)
Tosilog…Tocino Sinangag at Itlog…another member of the “SILOG” family. it is a cured meat product which is similar to bacon or ham. . you can also use beef or chicken for this recipe . . Did you know that “Pork” is naturally low in salt and a very good source of protein. Pork meats also have vitamins and minerals that are essential to our health. What pork lacks is the very important fiber. This what makes pork meats not heart friendly. in the philippines we called it “pampabata lalo na yung taba”….It is recommended that you take pork meats moderately.
In the plate:
- 1 cup garlic rice
- 150 gms tocino
- 1 pc fried sunny side egg
Ingredients:(tocino marination)
- 1 kl pork meat(thinly sliced)
- I cup white sugar
- 1 tbsp ground star anise
- 1 tsp of soy sauce
- 1 tsp baking soda
- 3 tbsp ketchup
- 1 tsbsp achuete powder
- 2 tbsp seasalt
Procedures:
- In a container, mix all ingredient except pork meat. mix well…then add pork meat and rubbed evenly. cover container and store at room temperature for atleast 24 hours. … then store in fridge for consumption
- In a pan, heat oil and stir fry approx 150gms of tocino per serving.. serve hot with garlic rice & sunny side egg.
