Eggplant Salad with shrimp paste


Eggplant…………This is one of the common salad especially in the rural areas or provinces in my country. A simple salad made of grilled or boiled eggplant with chopped tomatoes, onions and steamed kangkong (river spinach) served with a shrimp paste(alamang guisado). It is best paired with fried pork or fish. This is one of the favorite side salad of my wife………..Did you know that eggplant is an excellent source of dietary fiber, which can help protect against colon cancer and keeps the digestive system regular. The vitamins in eggplant consist primarily of vitamin A, B vitamins, folate and vitamin C. Eggplant is also rich in minerals, boasting a large quantity of potassium, magnesium, calcium and phosphorous. With no fat, eggplant makes an excellent addition to any diet..

Ingredients: serves 2-3 persons

  • 2 pcs eggplant (boiled or grilled) sliced
  • 2 whole tomatoes (big diced)
  • 1 large white onins (big diced)
  • 2 tbsp shrimp paste (alamang guisado)
  • 1 bunch steamed kangkong or bok choy
Procedures:
  • In a bowl, combine all ingredients together. best tossed with the shrimp paste
  • Transfer into a serving bowl
  • Best paired for fried dishes.

Fancy Ceazar’s Salad


Fancy Ceazars’ Salad………….Again, If you are still with me, this dish is part of our 7 course meal with my friend. This will be our salad for the dinner course.  For those who just tuned in, I already posted canape of melba toast last monday, baked mussels with triple cheese on tuesday and sopa de marina with eggs and nest yesterday as our soup. Today, My version of Ceasar Salad. You might be asking me why the name is “fancy”, I used fancy lettuce instead of using the COS lettuce, because this lettuce s easy to present and more crispy and tastier than any other lettuce you may liked. This not much different from the traditional ceasar salad as it has bacon bits, parmesan cheese and a special ceasars dressing with anchovies. This is the 4th course, wow we all have a big appetite. Stay tune, because tomorrow it will be the main dish………………………………Did you know that salad greens such as lettuce is a rich source of vitamin K, Vitamin K has potential role in the increase of bone mass by promoting osteotrophic activity in the bone. It also has established role in Alzheimer’s disease patients by limiting neuronal damage in the brain. Fresh leaves contain good amounts folates and vitamin C.  Folates require for DNA synthesis and therefore, vital in prevention of neural tube defects in-utero  fetus during pregnancy. Vitamin C is a powerful natural antioxidant; regular consumption of foods rich in vitamin C helps body develop resistance against infectious agents and scavenge harmful, pro-inflammatory free radicals.

Ingredients: serves 7 persons

  • 1 bunch of fancy lettuce approx 300 grams (washed and chilled)
  • 3 toasted whole meal bread- buttered and mixed with herbs as our croutons (cut in cubes)
  • 10 pcs crispy bacon(in bits)
  • 1/4 cup parmesan cheese
  • Ceasars dressings
Again, Using your imagination, plate all ingredients to your guest.

Ceasar dressings:

  • 2 cups mayonnaise
  • salt and pepper
  • 1 tbsp anchovies
  • 2 pcs egg yolk
  • 1 tbsp mustard
  • 1/2 cup water
  • 1/2 cup parmesan cheese

* in a food processor, mix all ingredients and transfer into a clean jag or a ketsup dispenser. Use for salad dressings

 

 

Christmas Fruit Salad


This is the second time I will be posting this fruit salad. Not much different from the first one. If you are in a rush for a christmas dessert. This is the answer. Good desserts doesnt have to be that complicated. Just bear in mind, you need to complete atleast 12 fruits to make it really meaningful. (well, that is our belief every chritmas and New years eve.) So can I hear what’s yours?…What is your dessert this christmas eve?………….Did you know that fruits are very healthy to us. Fruits are good natural sources of vitamin A, while others are rich in vitamin C, folate, and potassium. Almost all are naturally low in fat and calories, none have cholesterol, and many are great sources of fiber. Fruits also add wonderful flavors, textures, and colors to your diet……..

Ingredients:

  • 1 can fruit cocktail (500gms)
  • 1 can peaches (320 gms)
  • 1 cup grapes
  • 1/2 cup sultanas
  • 1 cup heavy cream
  • 1 can condensed milk
  • 1 cup cooked tapioca
  • 3 pc apples diced
  • 1 cup nata de coco

procedures:

  • In a large mixing bowl,mix cream and condensed milk, mix well. Then add in all ingredients.
  • Transfer into a container with lid. Keep in fridge for atleast 3 hours or overnight before serving.
  • Serve chilled!!!!!!!

New Year’s Fruit Salad


This is a very classic fruit salad..I remember every new year, dinner will not be completed without this dessert. Traditionally, we collect 12 fruits during the new year’s eve, and this fruit salad alone have already 6-7 kinds of fruits, so it means we only need to have atleast 6 more fruits to achieve our goal. As the saying goes, it’s a lucky charm on welcoming the year…Believe it or not? It’s up to you…….Did you now that including fruits in your diet is one sure way to a healthier body. A daily intake of these delicious foods can be of great benefit to your body in various ways. If you are beginning to eat a healthier diet to help you lose weight, or just as way to become more energetic, a diet high in fruits is a great way to start. As you start to eat more fruit, you will begin to realize how much better you will feel…..Agree?

Ingredients:

Fried Fish with coriander salad


Everytime we are craving for a fried fish, we always accompany it with this coriander salad. It is very appetizing that you can finish all the rice you can eat…this salad also best for fried salted pork(burong baboy), shrimp(halabos) and more…Did you know that coriander contains lots of vitamin A, B1, B2, C and iron. These leaves also act as stimulants and tonics. They strengthen the stomach and promote digestion, increase secretion and discharge of urine and reduce fever….

Ingredients: good for 2-3 persons)

  • oil for frying
  • 1 whole fish (snapper , kahawai or any fish)
  • salt and pepper
  • 1 bunch of coriander
  • 2 tomatoes
  • 1 medium onion
  • 1 tbsp fish sauce
  • 4 pcs chillies
  • salted eggs(optional)

Procedures:

  • season your fish with salt & pepper then fry until cooked and crispy
  • In a mixing bowl, add coriander, onions and tomatoes, seasoned with fish sauce, chillies are optional. serve in a bowl
  • enjoy!!
