Pinangat na Salmon Head


Salmon Head………As part of our 5 dollar challenge meal in our house, one of the list is this recipe. It is a fish recipe where in you just place all ingredients and boil it. Yes, it is very easy to cook. Well, you can not be wrong with salmon. Even it is the head part, it is very tasty and full of flavour.”pinangat” means a dish cooked with sour ingredients like vinegar, lemons, calamansi or tamarind. There are wide variety to cooked this dish depending on your taste. Must try!……………………Did you know that salmon is the healthiest food in the planet? Aside from its high content of omega-3 fatty acids, it is also a good source of Vitamin D as well. Vitamin D has been shown to play a crucial role in lowering the risk of several types of cancer, including breast, prostate, and colorectal cancer. Salmon contains particularly high levels of vitamin D and selenium, which is also associated with prevention of certain types of cancer, including colorectal cancer.

Ingredients: serves 2-3 persons

  • 2 heads of salmon cut into half
  • 1 cup water
  • 2 medium size tomatoes quartered
  • 1 medium size onions sliced
  • 1/2 tsp ground pepper
  • 1 bunch bok choy
  • 2 pcs dried chillies optional
  • pinch of salt and pepper
  • 1/4 cup vinegar.

Procedures.

  • In a medium wide saucepan, place and arrange everything except bok choy and bring to boil for 2-3 minutes.
  • Then add in bok choy and boil for a minute.
  • Serve hot with steamed rice and a dipping sauce made of fish sauce and chillies

Baked Baby Salmon


Baked Baby Salmon…….I got this recipe from my brother-in-law(armin), Because its a salmon, its really taste good. You can never be wrong with a salmon dish and best of all, it is very easy to prepare, once you place it in your oven, you can just watch a tv, do something else while waiting for your dinner. This dish is a simple baked baby salmon with garlic and lemon butter sauce. ………………..Did you know that i used a lot of garlic to make this recipe. Garlic can be used to treat high cholestrol, parasites, respiratory problems, poor digestion, and low energy. Studies suggest that regularly eating garlic helps lower blood pressure, controls blood sugar and blood cholesterol, and boosts the immune system. It has also been found to reduce the risk of esophageal, stomach, and colon cancer……………

Ingredients:

Ingredients: serves 3-4 persons

  • 1 pc baby salmon approx less than 1 kilo each
  • 3 tbsp of knorr seasoning or seasoning soy sauce
  • salt & pepper
  • 1 thumb ginger sliced
  • 1 tsp sesame oil
  • 1/4 butter
  • juice form squeeze of lemon
  • 8 cloves of garlic crushed and toasted
Procedures:
  • In a plate, rub and season fish with sesame oil, 1 tbsp of soy seasoning, salt & pepper then place ginger slices all over its body and inside stomach, inside head then cover with aluminum foil
  • Pre-heat oven at 170 degrees celsius and in a wired rack baking tin, place water enough to reach the wire rack, then place the fish and steamed bake for 25 minutes.
  • Transfer the cooked fish in a serving plate. In a pan, heat butter and toast garlic and pour over on top of the fish  then pour some seasoning soy sauce and lemon juice on top.
  • serve hot!

Smoked Salmon Platter


Smoked salmon…………I am not sure if I will be posting this one, because it is very easy and simple recipe and “no cooking” involve on this dish. Just want to share you a quick and easy appetizer if you have an unexpected visitor in your place. You can serve this while you are cooking for your dinner, It is a great starter paired with a good glass of wine. Or maybe a snack will do, just add a bread and butter on the side preferably a bagel or just a simple toast……………………..Did you know that smoked salmon is a good source of omega3 fatty acids. Omega-3 fatty acids are unsaturated fats found in oily, meaty fish like salmon, as well as flax-seed, walnuts, canola, and soy. These fatty acids are very beneficial for overall good health. Smoked salmon is also a “superfood” with multiple health benefits as a great source of protein, the antioxidant vitamin E and vitamin B-12.. Smoked salmon also has lower mercury content than other larger meaty fish such as swordfish and shark, making it a safer choice for fish rich in omega-3. Sometimes touted as a miracle food, smoked salmon isn’t going to cure any diseases on its own; however, there is evidence that including it in a balanced diet on a regular basis can help the body maintain good health…….

Ingredients: good for sharing

  • 5-10 pcs of thinly cut smoked salmon
  • salad greens
  • 1 – 2 tbsp of cream cheese
  • slices of cucumber and tomatoes
  • dressing of your choice.

Procedures:

  • using your creative imagination, assemble ingredients to your plate and serve.
  • Best paired with a glass of wine.
  • Enjoy!! 

 

Egg’s Benedict with Smoked Salmon


Egg’s Benedict with smoked salmon….this meal is quite popular in Nz. some prefer bacon or ham, but today I will be featuring the smoked salmon. I dont know where it was originated, All I know is every cafe has its own version of their egg’s benedict. Some cafe served it with salad, some served it with chips, asparagus and etc…I remember in the Philippines, we served this in a burger buns and sunny side egg…In our cafe we serve it the traditional way( I cant mention the name, coz my boss might kick me out for revealing the secret recipe..hehehehe)

This is my second post for the blog…Next time, I will be featuring my Wife’s specialties. a truly local and very traditional recipe’s… enjoy your meal!!!

Eggs’ Benedict with Smoked Salmon

in the plate…
1 pc english muffin (halves)
6-8 pcs spinach leaves (blanched)
4-5 pcs smoked salmon cuts (approx 80gms)
2 pcs poached egg
1/2 cup hollandaise sauce
dash of salt & pepper to taste
sprinkle with mince parsley leaves(optional)
Hollandaise sauce

1 cup butter
6 large egg yolks
2 tablespoon of lemon juice
1/2 teaspoon salt
dash cayenne pepper or hot pepper sauce
4 tablespoons hot water
finely chopped fresh parsley, if desired

Heat butter in a heavy saucepan until hot and foamy, but not browned. In a small bowl, whisk or beat egg yolks with lemon juice, salt, and cayenne pepper or hot sauce. Gradually beat in butter, then water. Return mixture to saucepan and beat over very low heat until mixture is slightly thickened. Serve immediately or let stand over warm water for up to 30 minutes. If desired, sprinkle with chopped fresh parsley before serving.
Makes about 2 cups of hollandaise sauce

Procedures / Plating:

Toast english muffin then place in warm plate, then topped with blanch spinach, salmon & poached egg. served with hollandaise sauce.

*to poached an egg…add a little salt & vinegar on a boiling water. poached for about 1-2 mins or as you desired the wellness of eggs.
