GP’s LOMI Guisado


Hello guys…. I havent post for a while. Been busy for our small business. GP’s garlic chili oil. Its an all rounder condiment that will bring amazing flavour and spice to your meal. Just simply add it at the end of your dish. The garlic, combined with chillies and smoky paprika flavour will surely enhance your meal. Yuummmm. . . Back to the dish, its a pancit lomi guisado. Its one of truly filipino-asian inspired dish which is favourite on winter either snacks or dinner. You can find this dish in every corner small cafeteria in our country……I am so happy to share you once again this recipe………Did you know that egg noodle is a rich source of proteins. Your body uses protein to build and repair tissues. You also use protein to make enzymes, hormones, and other body chemicals. Protein is an important building block of bones, muscles, cartilage, skin, and blood.

ingredients: (serves 4-6 persons)

  • 2 tbsp oil
  • 3 cloves minced garlic
  • 1 medium minced onions
  • 4 pcs chicken drum sticks
  • 6-8 pcs shrimps
  • 100 gms chicken liver
  • 300 gms pancit lomi
  • 2 pcs eggs for beating
  • 4 pcs hard boiled eggs
  • 4-6 pcs squid ball
  • 1 tbsp soy sauce
  • 1 tsp of salt / pepper
  • 2 cups water or chicken broth
  • 1 medium carrots sliced
  • 2 bunch bok choy or 100 gms cabbage sliced
  • 1 stalk celery diced
  • 1 tbsp fish sauce
  • 1 stalk spring onions chopped

Procedures:

  • In a large sauce pan, heat oil and saute garlic and onions, add chicken and liver and simmer for about 5 minutes.
  • add in squid ball and seasoned with soy sauce, salt & pepper.
  • add the rest of the vegetables and ingredients and lomi then cook for another 5 minutes
  • add water and adjust your taste by adding fish sauce
  • Bring to a boil ..dont over cooked the vegetables.
  • Turn off heat and break in 2 pcs eggs and stir.
  • serve hot!!

Chicken and Papaya Soup


Chicken and papaya soup………….. When you feel sick or unwell due to some hangover, lack of sleep or even headache, I highly recommend you to have this dish. It is a soup made with papaya, ginger and chicken. This dish is considered to be a variation of a tinola (PHI chicken soup) as it is composed of garlic, ginger and onions……………………….Did you know that ginger has been known for its healing properties.    Fresh ginger juice if applied to minor burns as well as skin irritations provides immediate relief for some people where as ginger oil is used in spas and saloons for a perceived refreshing effect on one’s mind and a potential ability to reduce arthritic pain. Another is, Ginger can also be used for reducing toothache and the discomfort which arises due to the infection in the upper respiratory tract due to its antibacterial and antifungal nature.

Ingredients: good for 4-6 persons

  • 12 pcs chicken wings
  • 2 small ripe papaya
  • 3 pcs large green chillies
  • 1/2 cup of  ginger Julienne sliced
  • 2 cloves of garlic
  • 1 medium white onions sliced
  • 1 tbsp oil
  • 1 tbsp fish sauce
  • 1/2 tsp salt and ground pepper
  • 1 litre water

Procedures:

  • In a large sauce pan, heat oil and saute garlic, onion and ginger.  then add in chicken and saute for 10 minutes allowing the chicken flavor to come out. Season with salt and pepper
  • add in water and boil and cook for about 15 minutes. then add in vegetables.
  • Adjust taste by adding a fish sauce.
  • Serve hot!

Sopa de Marina w/ Egg and Nest


Still part of the 7 course dinner with macaalays. (my senator look a like friend)……I present you the soup on its nest……This soup is made with seafood as I keep to balance the 7 course recipe. The soup is a simple marina chowder with mixed vegetables (marina means seafoods) and a broth from the baked mussels on yesterday’s post. The ” nest” was made of a pizza soft dough crust and formed in a muffin baking tray. Instead of cracking a fresh eggs to the soup I decided to have it boiled on the side as it will represent an egg with its nest…………………..Did you know that eggs is a good source of choline. Each eggs contain choline. Although our bodies can produce some choline, we cannot make enough to make up for an inadequate supply in our diets, and choline deficiency can also cause deficiency of another B vitamin critically important for health, folic acid. Choline is definitely a nutrient needed in good supply for good health. Choline is a key component of many fat-containing structures in cell membranes, whose flexibility and integrity depend on adequate supplies of choline. …

Ingredients(serves 6-8 persons)

  • 2 tbsp cooking oil
  • 4 cloves crushed garlic
  • 1 medium sliced onions
  • 1 stalk celery
  • 2 cups of mixed seafoods – mussels, shrimps, squids and fish fillets
  • 1 cup of mixed vegetables – peas, corn and carrots
  • 1 litre water
  • 1 cup fresh milk
  • 1 cup flour
  • 1 tsp marjoram
  • 1 tsp thyme
  • 1 tsp fish sauce
  • salt & pepper to taste
  • 1/4 cup grated cheese
  • drizzle of olive oil

Procedures:

  • In a large sauce pan, heat oil and saute garlic, onion and celery for 2-3 minutes. add in seafoods and cooked for 3-4 minutes then seasoned with salt & pepper and herbs. add flour and continue stirring until flour is cooked. add water and boil. then add mixed vegetables and cook for about 5 minutes.
  • Add cheese and drizzle with olive oil before serving!!

Batchoy Soup


Have you tried Exotic “internal” ingredients on your meal?….This dish is made from pork hearts, kidney, lungs and liver. Dare to try it?   Originally, the recipe also comes with pork blood, but since I could not find any pork blood here in NZ, I just leave the blood. Batchoy is a noodle soup made with pork organs and some vegetables. Originated in Philippines specifically in southern island………….Did you know that those internal organs I mentioned such as pork liver are good source of vitamin A. The vitamin A found in liver is beneficial to you in a number of ways. It contributes to healthy fertility and proper embryo development. It also helps children to avoid developing asthma, prevents kidney stones, regulates blood sugar and fats. Ingredients: serves 10-12 persons

  • 3 tbsp oil
  • 3 cloves minced garlic
  • 1 large chopped onions
  • 2 thumb size ginger thinly sliced
  • 100 gms pork liver
  • 100 gms pork lungs
  • 100 grams pork hearts
  • 100 grams pork kidney
  • 200 grams misua (chinese vermicelli noodles)
  • 2 litres water and 1 litre water for boiling
  • 1 bunch of spinach (sliced)
  • 1 tsp salt
  • 1 tsp ground pepper
  • 2 tbsp fish sauce
Procedures:
  • In a medium pan, place 1 litre water and boil pork hearts, liver and lungs for 10 minutes. drain and cut into small dice. set aside
  • In a large sauce pan, heat oil and saute garlic, onion, ginger and drained pork hearts, liver and lungs. Saute until golden brown then seasoned with salt and pepper.
  • Add in 2 litres of water and boil for 5 minutes. Add in spinach and vermicelli noodles then adjust your taste by adding fish sauce.
  • Serve hot!!

Beef Flank with Egg Noodle Soup


Beef flank with egg noodle soup…, everytime we go to hongkong-chinese restaurant, this is one of our favorite item on the menu. It’s a huge serving of noodle soup that can be enough for two people.(I think almost saturday after church we go there and order this)….Did you know that beef is a good source of zinc, which is helpful for preventing the damage to blood vessel walls, which can contribute to atherosclerosis and is also needed for the proper functioning of immune system…and egg noodles are rich in iron, calcium and vit.A..

Ingredients per bowl:

  • 80 gms egg noodles
  • 120 gms cooked beef brisket with carrots
  • 2 pcs of bok choy leaves
  • approx 1 1/2 cup of beef soup stock
  • toasted garlic

Ingredients for Beef Brisket: serves 6-8 persons

  • 3 cloves garlic (crushed)
  • 1 medium onions (sliced)
  • 1 kl beef brisket (cut in bite size)
  • 1 cup of water
  • 1/2 cup kikoman / soy sauce
  • 1/4 cup red bean curd
  • 1/2 cup hoisin sauce
  • 3 pcs cinnamon bars (wrapped in a tea bag)
  • 5 pcs star anise
  • 1/4 cup sugar
  • 1 stalk celery (chopped)
  • 2 pcs carrots (sliced bite size)
  • Salt & pepper to taste
  • slices of onion leeks for toppings

Procedures:

  • In a large sauce pan, bring to boil beef, water, celery, star anise, cinnamon bars & onions for 30 minutes or until beef is tender.
  • In a separate pan, saute garlic, hoisin sauce, red bean curd, carrots and seasoned with salt & pepper, kikoman, sugar.
  • remove cinnamon bars and add in your sautéed ingredients. Boil for another 15 minutes or until sauce is thickened.
  • You can serve in a bowl of steamed rice or topped to egg noodle soup and garnish with onion leeks.
  • Enjoy!!

Sinigang na Baka (beef in sour soup)


Sinigang na baka(beef sour soup)…Like philippines famous adobo cooking syle..you can also cook this with chicken(sinampalukan), Pork, fish(sinigang sa miso), shrimp and more….Its a health soup compose of meats and vegetables.It’s a complete one dish meal!!!..Did you know that the nutrients found in sour soup are 100 times more effective in inhibiting cancerous tumor growth than other foods. . . because it was made with its natural flavor of vegetables and meats…

Ingredients:

  • 1 kl of  beef (mix of meat & bones)
  • 1.5 liters of water
  • 1 medium onions (quartered)
  • 2 tbsp of ginger slices
  • 2 pcs of medium tomatoes (quartered)
  • 4 pcs string beans (cut 2 inches approx)
  • 2 bunch of bok choy(optional) or kangkong preferably
  • 5 pcs ocra
  • 1 small raddish (sliced
  • 1 pc of egg plant (sliced)
  • 1 pck of sinigang mix (for 1.5 liter mix) / or 100 gms crushed sampalok (tamarind) 

* please slice your vegetables evenly

Procedures:

  • In a large sauce pan, boil beef with water and onions & ginger approx 45 minutes or until tender.
  • Add the rest of the ingredients and cooked for about 2-3 minutes and serve hot. Dont over cook veggies.
  • serve with fish sauce with chillies on the side.
  • Enjoy!!!!

Pumpkin Soup


Pumpkin soup…I will consider that this soup is the healthiest kind of them all. To make my pumpkin soup exciting, I added a bunch of vegetables such as potato, kumara, onions, carrots & celery…hmmmm, sounds really healthy….Did you know that pumpkins are also high in Lutein & Zeaxanthin which protect the eyes against free radical damage and prevent formation of cataracts and degeneration of the eye tissues….

Ingredients: serves 12-15 bowls

  • 3 tbsp olive oil
  • 1 large onions (diced)
  • 1 stalk celery (diced)
  • 1 pc medium carrots (diced)
  • 1 medium potato (diced)
  • 1 big pumpkin (approx 1.2-1.5 kls)
  • 1 cup cream
  • 1/2 cup white sugar
  • 2 cups water or chicken stock
  • salt & pepper to taste
  • parsley for garnishing

Procedures:

  • Roast pumpkin for in oven at 180 degrees for 45 minutes or until well cooked. peel and let cool.
  • In a  large sauce pan, heat olive oil and saute onions for 2-3 minutes. add in all vegetables except pumpkin. seasoned with salt & pepper. simmer for about 5 minutes. add in water/stock & sugar, let it boil for another 5 minutes. add in pumpkin and stir well.
  • seasoned and adjust your taste through salt & pepper. lastly, add your cream and turn off fire.
  • puree soup into a blender or food processor in a little quantity (1-2 cups at a time)
  • best serve with garlic bread..

Chicken Chowder Soup


Chicken Chowder Soup…This is a great starter for your meal, you can combine it with a sandiwch or salad, or even a steak with mashed potatoes….yummy!!…I remember the first time taste it, it is similar to pinoy’s macaroni soup. it just have an italian taste of mixed herbs & much creamy…Did you know that adding cream / dairy to your soups or meal  provide protein, phosphorus, potassium, and vitamins A, D, B12, and riboflavin, chicken soup in particular, are very effective for treating cold and fever. It is an ancient and time-honored technique which makes you feel better instantly. Soup also helps in building immune system by releasing the therapeutic properties of the food.

Ingredients(serves 6-8 persons)

  • 3 tbsp cooking oil
  • 3 cloves garlic
  • 1 medium onions
  • 1 stalk celery
  • 2 pcs chicken breast fillet(cut into 8 pcs)
  • 2 cups of mixed veggies(corn, carrots, peas)
  • 6 cups water
  • 1 cup flour dissolve in 1 cup water
  • 1 tbsp mixed herbs
  • 1 tsp fish sauce
  • salt & pepper to taste
  • 2 tbsp grated cheese
  • dizzle of olive oil
  • a bunch of smile while cooking!!!!

Procedures:

  • In a large sauce pan, heat oil and saute garlic onion and celery for 2-3 minutes. add in chicken and stir for another 3-4 minutes until chicken is golden brown. our in veggies and water. bring to boil then add flour. seasoned with salt & pepper and mixed herbs.
  • Add cheese and dizzle with olive oil before serving!!
  • Dont forget….to enjoy!!!!!!!!!!

seafood egg noodle soup


A great dish for this coming winter season..It is so easy and simple as instant noodles. Usually, if we dont have anything on the fridge, this is our meal. ..Did you know that egg noodles are rich in carbohydrate, protein and fat, or those that yield energy in the form of calories. Egg noodles are high in carbohydrates, which provide energy for the brain and body’s cells. Egg noodles provide the same amount of protein contained in one whole egg or 1 oz. of meat. It gives you a lot of strenght and maybe your best weapon everytime going to your work.

Ingredient:(serves 3-4 persons)

  • oil
  • 2 clove garlic
  • 1/2 medium onion
  • salt & pepper
  • fish or shrimp soup stock 
  • 100 gms of mixed seafood (processed)
  • sesame oil
  • 100 gms egg noodles
  • 3 pcs bok choy
  • 100 gms thinly slice cabbage
  • 4 boiled eggs

Procedures:

  • In a large sauce pan, heat oil and saute garlic and onion..add in soup stock.. seasoned with salt & pepper..let it boil..add in the rest of the ingredients.. assemble in a serving bowl and serve hot.

 Enjoy your meal… will heat you up this winter..
