Flaky Bolognese Roll


Tired of traditional bolognese served on spaghetti pasta??….Well check this out, let’s bake it and rolled it in a pastry! ..Sometimes we can make traditional recipes into a non-traditional way. ..It’s good for pica-pica, snacks or even for your lunch box…Did you know that bolognese’s main ingredients are tomatoes, and tomatoes are rich in lycopene content. Lycopene is a vital anti-oxidant that helps in the fight against cancerous cell formation as well as other kinds of health complications and diseases.

Ingredients: makes 8-10 rolls

Bolognese sauce:

  • 2 tbsp oil
  • 2 tbsp garlic (crushed)
  • 1 medium onions (diced)
  • 1 small carrots (small diced)
  • 1 stalk celery
  • 100 gms chicken liver (minced)
  • 300 gms beef mince
  • 1 cup tomato sauce
  • 2 tbsp tomato paste
  • 1 tsp mixed herbs
  • salt & pepper
  • 2 tbsp corn flour dissolve in 1/2 cup water
  • 1 cup bread crumbs (for binding)

You may also need:

  • 1/2 cup grated cheese
  • flaky pastry roll 8 sheets (4×6 inches)
  • 1/4 cup melted butter for brushing

Procedures:

  • In a large sauce pan, heat oil and saute garlic and onions, add in beef mince, chicken liver and cooked for about 10 minutes and stirring every 5 minutes. add in veggies – tomato, carrots, celery and seasoned with herbs, salt & pepper
  • Add tomato sauce & paste & water. cook for another 5 minutes. add cornstarch mix and remove from heat. let it cool.
  • In a mixing bowl – pour in bolognese & bread crumbs and mix well. In a pastry bag, fill in bolgnese mixture.
  • spread a sheets of pastry roll and pipe in bolognese mix. fold and brush with butter and place cheese on top.
  • pre-heat oven at 180 degrees and bake it for 30 minutes or until pastry are fluffy.
  • Enjoy!!!!

Crab N’ Corn Chowder


Crab n corn chowder…..the recipe is great for banquets and catering. I remember when I was working in banquets, this soup is quite popular on our set menu’s list. almost every functions, we had this soup….Did you know that crab meat contains omega-3 fatty acids, which help lower blood pressure and thus reduce the risk of cardiovascular disease. In addition, omega-3 fatty acids are known to lower triglycerides, increase the supply of HDL or good cholesterol, prevent blood clotting and strengthen resistance to infections

Ingredients(serves 8-10 persons)

  • 3 tbsp cooking oil
  • 3 cloves garlic
  • 1 medium onions
  • 1 stalk celery
  • 6-8 pcs of crabmeat processed (cut in dice and leave 2 pcs for garnishing-cut strips)
  • 2 pcs crab / or crab claws (to add that exquisite flavor) 
  • 2 cups of mixed veggies(more in corn, carrots, peas)
  • 1.5 liter of water
  • 1 cup flour dissolve in 1 cup water
  • 1 cup cream
  • 1 tbsp mixed herbs
  • 1 tsp fish sauce
  • salt & pepper to taste
  • 2 tbsp grated cheese
  • drizzle of olive oil
  • a bunch of smile while cooking!!!!

Procedures:

  • In a large sauce pan, heat oil and saute garlic onion and celery for 2-3 minutes. add in crab claws or whole crab and stir for another 3-4 minutes. add in crab meat processed, veggies and water. bring to boil then add cream & flour. seasoned with salt & pepper and mixed herbs.
  • Add cheese and drizzle with olive oil before serving!!
  • Best with garlic bread…

Bibingkang Malagkit (glutinous rice cake)


My wife cooked this dish. . It’s from her grand mother original recipe and cooking method..It is so creamy & yummy that we made it twice in 2 weeks time..(usually we don’t cook twice as we share recipe on this food blog)…It is best when you have a cup of coffee or tea in the morning or in your snack time….Did you know that glutinous rice ia a good source of carbohydrates and some protein. Carbohydrates – helps give you the energy you need to start and end your day in work or school. Protein is an essential nutrient because it is involved in the structure of your skin, muscles and other bodily tissues

Ingredients: (good for 6-8 persons)

  • 2 cups glutinous rice
  • 4 cups coconut milk
  • 3/4 cup sugar- brown
  • 1/2 tsp salt 

Topping:

  • 1/2 cup sugar – brown
  • 3/4 cup coconut cream

Procedure:

  • In a pan, boil coconut milk. Add glutinous rice and salt. For 15-20 minutes, cook and stir the rice until it is tender and almost dry. Add in brown sugar and cook for 5 minutes.
  • On a pan with lined greased foil, spread the cooked rice.
  • Pre-heat oven 180 degrees.
  • For the topping, mix together the coconut cream and the sugar.
  • Pour evenly the mixture on top of the cooked rice.
  • Bake the rice for 10-15 minutes or when the top turns brown.
  • Serves 6-8 persons. Enjoy….

Pork and Beans


Pork and beans…I remember when I was a child, I can almost finish two cans of pork and beans in one meal at a time, but when I grew up and learn how to cook, I start to hate canned and instant foods..So now, I cook it similar to my favorite canned pork and beans, I check the ingredients at the label of the can and used it as my own recipe for this dish..It turns out really tasty as it can be….Did you know that kidney beans provide your body with many of the building blocks you need to maintain good health. Kidney beans also have specific benefits for your heart and digestive health. They are a cheap and convenient way to improve your diet and your health.

Ingredients: serves 3-4 persons

  • 2 tbsp olive oil
  • 3 cloves garlic crushed
  • 1 medium onions chopped
  • 150 grams pork meat with fat (liempo) cut in to bite size
  • 1 cup red kidney beans (soak in 2 cups water for 24 hours)
  • 1 cup tomato sauce
  • 1 tsp sage
  • 1 tsp thyme
  • 1 tsp fish sauce
  • salt & pepper
  • Parsley leaves for garnishing

Procedures:

  • In a sauce pan, boil red beans for about 30 minutes or until beans are soft.
  • In a pan, heat oil and saute garlic and onion, add in pork and seasoned with salt & pepper. saute for about 5 minutes
  • combine pork into the saucepan of boiling beans, add in tomato sauce, sage and thyme. adjust your taste by adding fish sauce.
  • you can add water for your desired thickness.
  • Enjoy!!!

Omelette – Chicken & Vegetables


Cooking is creativity…..I made this dish out of our leftover food. The meat I used was the ingredients when we made an empanada. Usually when we have unfinished food from last night, instead of wasting or reheating it, I create and recycle them into a new dish..You can mix it with fried rice, omelette or even make a quiche….Did you know that eggs are great for the eyes. An egg a day may prevent macular degeneraton due to the carotenoid content, specifically lutein and zeaxanthin. People who eat eggs every day lower their risk of developing cataracts, also because of carotenoid contents…

Ingredients: Good for sharing

  • 2 tbsp oil
  • 3 pcs of eggs beaten
  • 1/4 cup cream
  • 1/4 cup cheese
  • salt
  • (your left over food) my one is meat from empanada* see recipe from my blog: type “empanada”

 

Procedures:

  • in a mixing bowl, beat egg & cream & pinch of salt. beat well.
  • In a teflon pan. add a little oil the pour over beated egg mixtures. form a pancake look a like. dont over cook the egg.
  • add in your leftover food and pour over cheese then bake it to 180 degrees for just a minute or less. when your omelet is fluffy but still juicy, remove from oven. and serve hot!!
  • Enjoy!! best paired with a garlic bread.

Sinaing na Isda(slow cooked fish in soy sauce)


This dish is one of laguna and batangas specialty recipe(a province in the Philippines)…My wife is from laguna, Usually they use “tulingan”, a kind of fish similar to tuna but a smaller one…Cooking style is similar to our famous ADOBO, slowly cooked for 2 hours or more until its soft that you can eat even the fish bones. To compliment the fish, it was cook with a pork fat to give extra flavor for the dish….Did you know that fish is a high-protein and a good source of omega-3-fatty acids.this omega 3 help maintain cardiovascular health by playing a role in the regulation of blood clotting and vessel constriction….

Ingredients: (good for 3-4 persons)

  • 3 cloves garlic
  • 200 gms of pork fat(skin on)
  • 1 kl of fish(I use baby jack mackerel)
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 cup vinegar
  • 1/2 cup soy sauce
  • 3 tbsp white sugar
  • 1/2 cup water
  • 5 pcs dried chillies(optional)

procedures:

  • in a medium wide sauce pan(if you have palayok or clay pot would be better) just bring all ingredient together with the pork fat on the bottom followed by fish on top.
  • Cook for 2 hours using low heat or until sauce is thickened and fish is so tender…
  • Enjoy!!!!

Stir-fry Pork in Onions – Cantonese style


I made this recipe out of curiousity…Because evertime we dine at Cantonese-Hongkong Restaurant I always saw this besides our table…Usually they serve it on a sizzling plate, I can tell its really awesome and appetizing….Its just made of simple soy & oyster sauce, lots of onions, sesame oil and finished with lemon juice..That’s it, sometime simple really rocks your world…Did you know that onions have a variety of medicinal effects. Onions are a rich source of flavonoids, substances known to provide protection against cardiovascular disease. Some people(chinese) use onions to treat colds, coughs, and asthma, and to repel insects. In Chinese medicine, onions have been used to treat angina, coughs, bacterial infections, and breathing problems…

Ingredients: (good for sharing)

  • 1 tbsp oil
  • 1 large onions (sliced)
  • 150 gms thinly sliced pork
  • 1 tsp baking soda or 1/4 cup soda water
  • 2tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 2 tbsp lemon juice
  • 1 tsp sesame oil
  • salt & pepper

Procedures:

  • in a mixing bowl, season pork with salt & pepper, add soda or soda water. stand for 15 minutes
  • In a wok, using high heat, place oil and saute pork for 2-3 minutes, add in onions and seasoned with soy & oyster sauce.
  • add in sesame oil and lemon juice and remove from fire.
  • Serve hot with rice or serve on a sizzling plate.
  • Enjoy!!!!!!

Kids Mini Pizza


Believe it or not? This pizza was made by my 5 years old daughter from scratch to finish and to her lunch box…This pizza will be her lunch box at school the following day, because originally my plan is to make her a burger, but she is craving for a pizza so we use the burger buns as the pizza dough….I think my daughter have the passion for cooking, because usually kids of her age will watch barney’s, dora and other cartoon program from the television, but my daughter is different, she wants to watch cooking shows such as Gordons Ramsey, Jaimee oliver, MKR, Top Chef’s and many more……….Did you know that pizza sauce which usually compose of onions, garlic, oregano and basil give pizza sauce its distinctive aroma also contribute heartily to our health. Oregano, for instance, is a potent antioxidant. Garlic and onions contain flavonoids for your heart. Basil has antidyspeptic and antiseptic properties.

Ingredients:

  • 6 burger buns
  • 3 slice of ham (chopped to small dice)
  • 1 small onions chopped to small dice)
  • 1 cup grated cheese (quickmelt)
  • Pizza sauce

To make pizza sauce:

  • saute 2 cloves chopped garlic and 1 small chopped onions then add 2 cups of tomato sauce, 3 tbsp tomato paste and 1 tsp of oregano. then seasoned with 1 tsp of basil(dried), salt & pepper.

Procedures:

  • Spread pizza sauce to the burger buns (or pizza dough) and using your imagination, topped the following ingredient. Actually you can choose topping that what you are craving for…like pineapple, pepperoni, capsicum and more….
  • bake for 180 degrees celsius at 12-15 minutes or until ready.
  • Best serve with a hot sauce..Good for your kids lunch box too… 

Beef Brisket


Beef Brisket…this dish is very similar to philippines’ “PARES”, ..Brisket is a popular food in chinese restaurant and takeaways…You can do a lot of meal using this beef brisket, you can top it on egg noodle soup, some serve it on a stir-fry vegetables and many more… Did you know that beef is a good source of protein, cholesterol, sodium, VitaminB6, Vitamin B12, zinc, iron, phosphorus, niacin, iron and selenium. The protein in Beef helps in providing strength to the body and helps in building muscles.

Ingredients: serves 6-8 persons

  • 3 cloves garlic (crushed)
  • 1 medium onions (sliced)
  • 1 kl beef brisket (cut in bite size)
  • 1 cup of water
  • 1/2 cup kikoman / soy sauce
  • 1/4 cup red bean curd
  • 1/2 cup hoisin sauce
  • 3 pcs cinnamon bars (wrapped in a tea bag)
  • 5 pcs star anise
  • 1/4 cup sugar
  • 1 stalk celery (chopped)
  • 2 pcs carrots (sliced bite size)
  • Salt & pepper to taste
  • slices of onion leeks for toppings

Procedures:

  • In a large sauce pan, bring to boil beef, water, celery, star anise, cinnamon bars & onions for 30 minutes or until beef is tender.
  • In a separate pan, saute garlic, hoisin sauce, red bean curd, carrots and seasoned with salt & pepper, kikoman, sugar.
  • remove cinnamon bars and add in your sautéed ingredients. Boil for another 15 minutes or until sauce is thickened.
  • You can serve in a bowl of steamed rice or topped to egg noodle soup and garnish with onion leeks.
  • Enjoy!!

 

 

Sweet Chilli Roasted Chicken


As I read the label of a bottle of sweet chili sauce…I notice a recipe of a chicken using this sauce…Out of curiosity, I tried it. And its awesome, Just made a little revisions to make it more flavorful. . .Did you know that chickens are rich source of a variety of essential nutrients and vitamins, which assist in strengthening the immune system of the body. Chicken is also good source of niacin, a B-vitamin that protects the body against cancer.  Chicken is also reputed to be one of the safest meats available, as it is least associated with any side-effects of consumption….

Ingredients: (good for 3-4 persons)

  • 1 whole chicken approx 1 – 1.3 kilo
  • 1 cup of sweet chilli sauce
  • salt & pepper
  • 1 tsp of mixed herbs
  • 3 tbsp of soy sauce
  • 1/4 cup of pineapple juice

Procedures:

  • In a container, pour all ingredient except chicken and mix well. add in chicken and rub evenly. cover and marinate for a minimum of 2 hours or overnight.
  • Pre-heat oven for 5 minutes at 160 degrees celsius. On the same temperature, place chicken (thigh up) and baked for 45 minutes. (brush every 10 minutes with the remaining marinade mix)
  • serve hot!!!  

Satay Chicken with Vegetables


Satay Chicken….When I tasted this dish, I remember something, it’s a “migoreng satay noodles”…It’s a special blend of peanut butter and sweet chilli sauce…My wife love it. I cooked this recipe banquet style – I cook them separate. stir-fry the meat first and cook the sauce, then toss it. Because in banquet & caterings, we usually fry all the meats, then make a kind of sauce and toss it. Time is gold in the kitchen…Did you know that peanut butter contains fairly high quantities of dietary fiber which again helps in regulating both blood cholesterol and blood sugar levels. In some studies, they say Peanut butter is a very caloric, yet very healthy food. . .

ingredients: good for 3-4 persons

  • 1 tbsp oil & oil for frying
  • 2 cloves garlic crushed
  • 30 gms crushed ginger
  • 6 pcs chicken wings (cut into 2 each)
  • salt & pepper
  • 1 tbsp peanut butter
  • 3 tbsp sweet chilli sauce
  • 1 tsp soy sauce
  • 1 cup water
  • 100 gms carrots (cut big strips)
  • 100 gms potato (cut big strips)
  • some parsley for garnishing

Procedures:

  • In a separate frying pan – fry chicken(seasoned with salt & pepper) until half done and set aside.
  • in a mixing bowl, mix peanut butter, water, soy sauce & chilli sauce. mix well
  • In a pan, heat oil and saute garlic & onion. add in potato & carrots. simmer for 2-3 minutes o until half done.
  • pour in “mix sauces” and add “fried chicken”. cook for about 3-5 minutes or until sauce is thickened.
  • Serve hot!
  • Enjoy!!!

Pan Fried Chicken with Vegetable Curry


Tired of traditional chicken curry dishes….You need to try this,,,Still a chicken curry but I just separate the chicken from the veggies, to make it exciting, I made a flavor for the chicken that will blend on the vegetable curry….Did you know that Curry powder is largely made with turmeric powder & other spices and contains many powerful antioxidants and anti-inflammatory compounds. Curcumin is one of the main substances in turmeric that gives the curry mix its yellow colorcurcumin supports colon health, exerts neuroprotective activity and helps maintain a healthy cardiovascular system…

Ingredients (good for sharing)

  • Boneless Chicken(skin on – marinated in 1/2 lemon juice squeeze, 1 tbsp soy sauce, salt & pepper then coat in flour)
  • 1 tbsp oil
  • 1 small onion
  • 1 medium potato(peeled and diced)
  • 1 small capsicum (diced)
  • 1 small carrot (peeled & diced)
  • 1 tsp curry powder
  • 1 tsp soy sauce
  • salt & pepper
  • 1/2 cup water
  • 1 tsp cornstarch dissolve in 1/2 cup water.
  • 1 pc bay leaf

Procedures:

  • in a frying pan, place a little oil and fry chicken-flour mix in low heat. (set aside)
  • In a sauce pan – heat oil and saute onions for 2-3 minutes. ad in vegetables and seasoned with soy sauce, curry powder & salt & pepper and saute for about 5 minutes.add water, bay leaf & let it boil or until vegetables are almost done. pour over cornstarch mix and remove from heat. 
  • Serve on a plate and top with your pan fried chicken.
  • smile and enjoy!!

Pork Sisig


Pork sisig…I heard a story of this dish some where in pampanga(a province in the Philippines), A Chef (on a small cafeteria) lightly burned a pork chops and she realized that was the last meat she have. Instead of giving a refund, She  takeoff some burned parts of the meat, she chopped the remaining meat and put some onions, chillies and seasoned with soy sauce & salt & pepper..and the customers liked it…Did you know that pork in moderate quantities is helpful in gaining energy. It is good for skin, eyes, nervous system, bones and mental performance. Intake of Pork also ensures better immunity to body due to presence of essential antioxidants…

Ingredients: serve 4-6 persons

  • 1 tbsp oil
  • 500 gms pork belly (grilled & chopped)
  • 250 gms pork liver (grilled & chopped)
  • 100 gms cooked chicken liver adobo (search adobo recipe on my blog)
  • 2 medium onions chopped
  • 30 gms minced ginger
  • salt & pepper to taste
  • 4-5 pcs chopped chillies
  • 1 tbsp soy sauce
  • 1/4 cup mayonnaise
  • 1 egg per sizzling plate or per serving

Procedures:

  • In a pan, heat oil & saute onions, ginger then add in chopped & grilled pork, pork liver & adobong chicken liver. seasoned with soy sauce, salt & pepper. chillies are optional. and serve hot in aplate 
  • your serving options – Heat a sizzling plate the add pork sisig, crack an egg and add mayonnaise
  • Serve with lemon.
  • Enjoy!!

Pan Fried Pork with Black Pepper Sauce (Banquet Style)


 Usually, some customers have a budget, most caterers work on it and never decline them. This recipe is ideal for banquet / catering…wondering why?.. because we fried the meat flour coated and makes it double the quantity without sacrificing the taste…You can also try this black pepper sauce on chicken, beef & fish…Did you know that black pepper has long been recognized as a carminitive, (a substance that helps prevent the formation of intestinal gas), a property likely due to its beneficial effect of stimulating hydrochloric acid production. In addition, black pepper has diaphoretic (promotes sweating), and diuretic (promotes urination) properties.

 Ingredients (good for 3-4 persons)

  • 2 tbsp butter
  • 2 cloves garlic
  • 1 medium onions
  • 1 medium green capsicum
  • 1 tbsp cooking brandy
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • Black ground peppers
  • Salt to taste
  • 2 tbsp cornstarch dissolve in 1 cup water
  • 1 cup water / or stock (pork)
  • dash of sesame oil
  • thinly slice pork meat-seasoned with salt & pepper  (flour coated – deep in flour – egg and flour again)
  • Oil for frying

Procedures:

  • In a separate frying pan, deep fry pork slices until golden brown, set aside
  • In a sauce pan, heat butter and saute garlic & onions, add in capsicum, brandy, soy & oyster sauce and salt & pepper.. add-in water and thickened with cornstarch mixtures.
  • Tossed with fried pork then serve hot

Don Buri – Gyudon (beef)


Gyudon…its a beef in sweet soy sauce serve in a bowl of rice. I remember this was the favorite of my previous boss. We had several revisions before we introduce this product to our customers. We cooked this with lots of onions & leeks…and the outcome is…blockbuster!!! A favorite japanese dish during our time. So I am happy to share you this recipe…Did you know that onions is a powerful anti-septic that is very rich in vitamin A, B & C. It also contains iron & calcium. The high contain of iron in onions makes it beneficial for the treatment of anemia…Onions also called as the “king of vegetables”…

Ingredients: Serves 4-6 bowls

  • 100 gms butter
  • 2 big onions (sliced)
  • 1 stalk of leeks (sliced) – save some for garnishing
  • 500 gms thinly sliced beef
  • 1 cup sprite or soda water
  • salt & pepper
  • 1/2 cup kikoman soy sauce
  • 1/2 cup white sugar
  • pinch of hondashe
  • 1 sheet of nori (seaweeds) cut strips 
  • pinch of sesame seeds
  • 2 tbsp cornstarch dissolve in 1 cup water
  • Eggs – optional (to be cooked per bowl)

Procedures:

  • Heat butter and saute onions & leeks for 3-5 minutes. Add in beef and stir fry until light brown in color. seasoned with salt & pepper.
  • Add in soda water and boil for 30 minutes using low fire. (stir every 5 minutes)
  • Add in the rest of the ingredients. To cook egg, in a small pan, pour over a gyudon mix then add egg, cover untl egg is cooked. serve in a bowl then garnish with leeks.
  • Enjoy!!!
